A Hot Pot of Debate
The strong smell of the famous Sichuan cooking floods into local streets, whose hot pots of chili (红辣椒) and oil boil like restless volcanoes (火山). Along with all the flavours, however, a wave of panic is in the air. Sichuan cuisine (美食) is facing a crisis.
It seems surprising to hear such concern, since Sichuan cuisine has been conquering the world and gaining considerable popularity abroad as China’s favourite out-of-home dining.
But according to some old and experienced cooks, the rapid growth has worsened the cuisine, drowning the tastes of dishes in large amounts of chili and oil with menus being narrowed to spicy (辛辣的) dishes. Many cooks now are pursuing spicier and spicier food, ignoring the great variety of the cuisine. Thus, the simplification of tastes has created a crisis, sending a strong shocking wave into the time-honoured but complex traditions. Early this year, I watched a young cook add green vegetable to Kung Pao Chicken, which should be a wonderful mix of chicken, peanuts, red chilies and spices.
However, voices from many young cooks throw light on the new demands on Sichuan cuisine in the modern time— ”There’s no survival without innovation.” They hold the view that we do have to maintain the tradition, but it’s not a display in a museum. What makes sense is that although Sichuanese cooking is classified as one of the eight great cuisines of China, its roots are quite shallow, so after over several centuries of trade and migration, outsiders brought in a variety of new ingredients and cooking techniques. These influences combined only several generations ago to create an unusually tasty cuisine.
I believe the attractiveness of Sichuan cuisine is that it’s a big melting pot. Whatever is attractive in other cuisines, it can be absorbed and adapted to Sichuan cuisine. It’s not right to judge who is right and who is wrong, but it is clear that we should preserve the essence of tradition, while meeting modern expectations as well.

One way to know how much soda people drink is to ask them.
The problem? We tend to underestimate, lie or forget what we’ve consumed.
And this is a challenge for researchers who study the links between sugarsweetened beverages and obesity.
A new study published in the Journal of Nutrition explains a technique that could help researchers get a good measurement of sugary beverage consumption — by analyzing a piece of hair or a blood sample.
Researcher Diane O’Brien of the University of Alaska and her colleagues have used carbon isotope (同位素)analysis to develop their measuring tool. “We’re isolating the [carbon] isotope ratio in a specific molecule,” explains O’Brien. The molecule is an amino acid called alanine, which captures carbon from sugars.
It turns out that when you consume sweetened soda, slightly more of a particular kind of carbon called C13 gets trapped in alanine and incorporated into proteins. And proteins hang around in the body much longer than sugar does. So the scientists say they can sample proteins to look for extra amounts of C13 in alanine. People with a lot of C13 are likely to be people who have consumed a lot of corn syrup and cane sugar.
Using this technique, O’Brien says, you can capture a longerterm picture of sugar consumption compared with urine samples — which only reveal how much sugar a person has consumed in the past day or so.
Carbon isotope analysis has helped scientists piece together ancient dietary patterns, explains Dale Schoeller of the University of Wisconsin, Madison, in a commentary about the study: “The use of stable isotope signatures has even provided information about the diet of Otzi aka The Iceman, the 5,000yearold natural mummy found in the Alps in 1991.”
And he writes that he thinks the technique will be helpful for researchers studying the obesity epidemic.
“This should be a major step toward resolving the controversy over the role of caloric sweetener intake in the development of obesity,” writes Schoeller.

4 . China’ s booming coffee business has made it the second most important market for global giant Starbucks, behind only its home U.S. market. But it’s also providing fertile ground for new and innovative (勇于创新的) players catering to local preferences. One of the latest in that group is Shanghai-based chain Manner Coffee, which, together with other similar homegrown names, are reshaping the country’s coffee drinking landscape.
This year alone has seen 16 financing events in China’s coffee sector, with more than 5 billion yuan ($784 million ) pouring into the space. Even the infamous Luckin Coffee, which was removed from the Nasdaq last year after being exposed for massive fraud (欺诈), is once again attracting investors’ attention.
Dubbed (被称作) as a seller of “street coffee” priced between 10 yuan and 20 yuan per cup, equal to $ 3 or less, Manner quickly became popular among young office workers for its less expensive price and high quality.
Manner and the other up-and-comers are thriving on a China coffee market that is growing at a healthy 15% per year. After expanding slowly in its first three years, Manner’s store count rose from just eight at the end of 2018 to 194 this year, with 165 in Shanghai and the rest in Beijng, Shenzhen, Chengdu and other cities. It plans to keep expanding outside of Shanghai by opening up to 100 new stores a year.
Meanwhile, Starbucks reported its same-store sales in the Chinese market grew by just 19% in its financial third quarter, down sharply from 91% growth in the previous quarter, due in part to weak year-ago figures from stores affected during early stages of the pandemic in 2020. The company forecast that growth would slow further still in the following years.

The easy way out isn't always easiest. I learned that lesson when I decided to treat my father to a special meal. I glanced through the cookbook and chose a menu which included homemade bread. Knowing the bread would take time, I started on it as soon as he left for work.
As I was not experienced in cooking, I thought if a dozen was good, two dozen would be better, so I doubled everything. As Dad loved oranges, I also opened a can of orange and poured it all into the bowl. Soon there was sticky dough (面团) covered with ugly yellowish marks. Realizing I had been defeated, I put the dough in the rubbish bin outside so I wouldn't have to face him laughing at my work.
I went on preparing the rest of the meal, and, when Dad got home, we sat down to Cornish chicken with rice. He tried to enjoy the meal but seemed disturbed. Twice he got up and went outside, saying he thought he heard a noise. The third time he left, I went to the windows to see what he was doing.
Looking out, I saw Dad standing about three feet from the rubbish bin, holding the lid up with a stick and looking into the container. When I came out of the house, he dropped the stick and explained that there was something alive in the rubbish bin. Picking up the stick again, he held the lid up enough for me to see. I felt cold. But I stepped closer and looked harder.
Without doubt it was my work. The hot sun had caused the dough to double in size and the. fermenting yeast (酵母) made the surface shake and sigh as though it were breathing. I had to admit what the "living thing" was and why it was there. I don't know who was more embarrassed by the whole thing, Dad or me.

It's true! These flavorful onions contain a ton of nutrients that are important for our overall well-being. Let’s see more about onion nutrition and why they're so good for you.
Here are the nutrition facts for onions, according to the USDA. Onions are very low in calories and do have a little bit of carbohydrates and natural sugars — that's why they get sweet when you cook them. Here's what you get in one medium onion.

Onions contain several vitamins and minerals and they have been shown to promote health in many ways. In ancient times, onions were used for food when food sources got low, and for medicinal purposes to treat illness such as headaches, colds, and heart disease.
Onions contain anti-inflammatory properties that may help reduce the attack of high blood pressure. One of powerful antioxidants that is responsible for this health benefit is quercetin. Quercetin is a flavonoid antioxidant that has been associated with decreasing the risk of heart disease.
For centuries, onions have been used to fight off dangerous bacteria(细菌). Quercetin, is also responsible for this bacteria-fighting benefit. According to recent studies, the growth of bacteria, like H. pylori and MRSA were controlled when they were paired with quercetin taken from yellow onions.
Research indicates that onions may help people with diabetes(糖尿病) lower their blood sugar. This is due to the sulfur compounds found in onions, specifically S-methylcysteine and quercetin. These compounds have been associated with regulating one’s blood sugar.
Eat an onion. Well, maybe not a whole onion at one sitting, but definitely try adding them to your next recipe.
Haagen-Dazs from Europe started in 1989 and is 5-10 times more expensive than regular ice cream. There is no real advantage. However, it adopted a unique marketing strategy, and quickly occupied the market as a top ice cream brand.
Haagen-Dazs did not set up shops in ordinary supermarkets or grocery stores. Haagen-Dazs leisure fashion shops are located in busy sections of malls. The layout is carefully planned to create an elegant atmosphere, and sometimes, a flagship store will cost several million dollars.
Compared to other ice cream brands, Haagen-Dazs consumers are tightly grouped. It is understood that Haagen-Dazs seldom does television advertising. The majority of ads have the highly visual impact of the print medium. In particular many advertisements look for those pyramid tip consumers. Moreover, as long as the consumer spending 500 Yuan to fill in a small form can become their members, these members will be regularly sent advertisements by direct mail. Praise of customers is a powerful weapon for Haagen-Dazs.
There is always much creative ingenuity(独创性)in Haagen-Dazs advertising, so it is remembered by the public. Initial advertisements such as: “Delicious Haagen-Dazs, like 24K gold, Japan Kobe beef from Japan, original palm oil, mushroom truffles and Chinese ceramics…” and “Love her, let her eat Haagen-Dazs.” attracted numerous Haagen-Dazs lovers who became regulars.
Today, Haagen-Dazs has about 77stores in 55 countries with annual sales of more than 1 billion US dollars. Haagen-Dazs has become the world’s most popular ice cream brand. In the United States, its market share is 6.1%, 1% in France, 4.6% in Japan, 4% in Singapore and 5% in Hong Kong.
Determined to win the majority of wealth customers, they have combined positioning in the marketplace with dedicated brand goals. This is the real secret of success.

10 . People have always had to find ways to keep food safe to eat. Methods to dry, smoke and salt food were invented thousands of years ago.
Clean fruits or vegetables are placed in glass bottles. The food can be put into the bottles either hot or cold. The cold method is used for soft fruits and vegetables that could lose their shape or taste.
After the food has been placed in glass bottles, boiling water is poured into the bottles to about three centimeters below the top.
The water must completely cover the bottles, from three to five centimeters over the top. When the water boils, any air in the bottles will be expelled. The boiling continues for several minutes. Then the bottles are allowed to cool. Finally, they are placed briefly into cold water.
When the bottles are completely cool, notes can be placed on them to identify what is inside. The bottles can then be stored in a cool, dark place at a temperature of between 4℃ and 21℃.
