When I was a child, I was very greedy. Whenever I saw something delicious, I would ask my mom to buy it for me. There was one thing that I could never get enough of, and that was cream bread. Due to my constant consumption, my body became increasingly overweight, and my resistance weakened. As a result, my mom stopped buying it for me.

One day, while shopping with my mom, we passed by a bakery, and I started begging for cream bread. To my surprise, this time my mom agreed without hesitation. We entered the bakery, but unfortunately, they had sold out of cream bread. So my mom bought me a kind of regular bread.

Upon returning home, I felt unhappy and kept thinking about the delicious cream bread in my mind. Suddenly, the sound of the phone interrupted my thoughts. My mom answered the call briefly and then quickly changed her clothes. Seeing her anxious expression, I asked curiously, “Mom, what’s wrong? Is there something urgent?” While changing her clothes, she replied, “There’s an emergency at your aunt’s house. I need to go check on it. I’ll be back soon. If you’re hungry, just eat the bread we bought earlier.” With those words, she grabbed her bag and left.

After watching TV, I was hungry. So, following my mom’s instructions, I started eating the bread. However, as soon as I took a bite, I immediately spat it out and complained loudly, “This bread is so tasteless! It’s not even half as good as cream bread!” I threw the bread aside in frustration. Later on, my stomach growled even louder, causing me to think of ways to make the bread more enjoyable. Suddenly, I remembered that there was a bottle of something similar to cream in my mom’s cosmetics (化妆品) — facial cleanser (洗面奶). So, I walked over to her dressing table and picked up the bottle. Excitedly, I opened the bottle and squeezed (挤) the cleanser onto the bread, thinking to myself that this bread would surely taste great now.

The Science of Chocolate

Chocolate is a complex chemical delight containing over 500 individual flavour components together with stimulants and a host of substances beneficial to health. With that many ingredients, it’s no surprise that crafting chocolate is a science in itself, requiring careful temperature control. For starters, cocoa butter has six different forms of crystals, all of which have different melting points. And the fat crystals in the final product have to be exactly the right type, size and shape for the flavour to be correct. This is achieved through tempering, a crucial stage of chocolate production that involves cooling so that crystals form before raising the temperature slightly to melt unstable crystals.

While we tend to think of chocolate as junk food, some of its components may actually be good for us, Cocoa beans are rich organic chemicals called flavonoids (类黄酮). One particular flavonoid called epicatechin (表儿茶酸) increases blood flow in the brain and prevents the grouping together of the proteins that characterise conditions such as Alzheimer’s. Research published in March 2014 also found that dark chocolate is used by bacteria in the stomach to produce anti- inflammatory (消炎的) compounds that are good for your heart. But so far, most studies suggesting health benefits for chocolate have been carried out on mice, so further research would be required to see whether there are the same benefits in humans.

At the University of Bath, scientists have been studying mouse brain cells grown in the lab. “Our research has shown that epicatechin and related flavonoids have promising protective actions in brain cells, explains Dr Robert Williams, a neuroscientist at the university. “But whether we could achieve the levels required to reproduce these effects in humans by eating chocolate is uncertain.” The jury is still out on whether we can consider chocolate a health food. But since the positive ingredients are all found in cocoa itself, there’s one rule of thumb — the darker, the better.

“You’re right! Maybe he put a jalapeno pepper in it,”   Alexis said, cutting up a bright green jalapeno and adding it to the bowl.

It was closer, but it still didn’t taste right. Alexis was drooping her head, disappointed. “Should we look in a cookbook?”

“Grandpa was never one to follow a recipe,” Dad entered the kitchen and said.

It was true. People loved Grandpa’s potato salad because it was one of a kind. Alexis remembered posing with Grandpa for a photo while they were making the salad.

Photo! That gave her an idea. Alexis hurried to the bookcase and found an old photo album. She immediately flipped it open, expecting to find clues in the photos there. Lots of photos showed Grandpa and Grandma cooking together. Dad laughed, “He and Grandma loved to tease each other but he always called her Honey.”

“Do you think he put honey in the potato salad?” Mum asked.

“It is worth a try,” said Alexis. She stirred some honey into the bowl.

But it still wasn’t quite right. Alexis’ heart sank, on the verge of giving up. Dad kept flipping the album. At the end of the album was the picture of Grandpa and Alexis making the salad together.

Will Plant-based Protein Continue to be an Appetizer in Food World?

A good vegan milk needs to look like milk and taste like milk, whether it’s a fatty version, preferred by bakers, or a skimmed one, favored by the health-conscious. For years, manufacturers of plant-based protein have had trouble hacking this delicate imitation game and it seems that they are winning back a bit. The global revenues (收益) from alternative proteins could reach $290 billion by 2035 and that is a cautious estimate. However, can it last?

Unlike those early products, which were neither terribly tasty nor particularly nutritious, cleaver (剁肉刀) processing improves textures, additives boost taste and a pinch of specially engineered peas and beans adds nutrient in the latest products. Still, ultra-processed substitutes seldom match animal proteins in nutritional value. Animal products, including milk, are better for children’s bone development, though lab- grown versions of meat or dairy are becoming more nutritious. Meanwhile, green-minded consumers are realizing that plant-based does not necessarily mean sustainable in that it still takes a lot to obtain raw materials. Farming almonds (杏仁) to make a milk-like drink, for example, uses huge quantities of water.

Plant-based proteins are also a tough sell in giant markets like India, where diets are already rich in plants and vegetables, or Nigera, where meat-eating is a sign of wealth. That limits their global appeal.

All these suggests that alternative proteins have far to go to replace the animal kind. The limitations may be weighing on the firms involved. Oatly’s market value has fallen by about 80% since its listing, partly because of production difficulties. That of Beyond Meat, whose burgers feature in McDonald’s latest menu, is down by 90% from its peak. Plant-based foods may no longer be only an appetizer in diets, but their maker remain one in food business.

Growing up, I was always around my grandma Meredith. She was the one who originally inspired my love for cooking and my dream of becoming a chef. Without a second of hesitation, I agreed to travel back home. Thankfully, my boss at the restaurant let me take unpaid leave for the next several months so I could come home to help out with Gran. After driving across several states, I finally got back to our family home in West Virginia. Yet, what I saw was really bard for me to bear. The Meredith I saw then was not the lively, joyful Meredith I had seen while I was growing up.

“Tony!” she called to me from her bed, “It’s so good to see you! "

“Gran,” I sighed, “I’m not Tony. That’s dad, your son. I’m Hank.”

This was the start of a months-long journey of helping out around the house-cooking, cleaning, and, most of all, keeping Gran in good health and good spirits.

Every day, I cooked delicious food to keep everyone’s spirits high. But, secretly, I hoped that cooking some dishes that we had made together in my childhood would somehow help get Gran’s memory of me back, if not just for a moment.

Stews (炖菜), chops (排骨), roasts—I served all of these to Gran and my parents around the clock. When I wasn’t taking Gran out for strolls (散步) in her wheelchair or changing her bed sheets, I was cooking. I had cooked for dignitaries (显要人物) and rock stars while at the restaurant in New York City, but never had I poured my heart out into my meals than I did then for Grandma Meredith.
