The East Room of the White House was bursting with color on July 14, as 56 young cooks arrived for the Kids’ Stale Dinner. The chefs, aged from 8 to 12, were winners of the Healthy Lunchtime Challenge, a program that encourages kids to create healthy, affordable, original, and tasty lunch recipes.
Former First Lady Michelle Obama hosted the event, now in its fifth year and part of her Let’s Move! More than 1,200 kids throughout America entered the challenge, were encouraged to be creative and use ingredients (原料) grown in their home states, or communities. Recipes had to represent each of the food groups by including fruits, vegetables, whole grains, lean protein, and low-fat dairy. The 56 winners were treated to a meal featuring some of their own creations.
“This event isn’t just about eating well today, but about setting kids like all of you up for a lifetime of healthy choices.” the former first lady told the young cooks. “As small you are, you can change lives. I see the work of kids, the magic you all do. People change because of kids.”
Amelie Chen’s winning recipe was Breadfruit, Taro, and Garlic Chicken Trio. The 9-year-old from American Samoa said she was “very excited” to be attending the event. “Winning this trip to the White House makes me think of my favorite quote from Walt Disney: ‘If you can dream it, you can do it,’” she said.
Famous cooks Rachaels Ray and Tanya Steel, editorial director of Clean Plates Omnimedia, a media company focusing on health and wellness food culture, were also in attendance. Michelle recognized them as driving forces in making the Kids’ State Dinner a reality several years ago. Ray and Steel posed for pictures with the young cooks.
Following the meal, the crowd was treated to performances by the cast of Walt Disney World Resort’s The Jungle Book. The 56 winners ended their visit with a tour of the White House Kitchen Garden.

Chengdu, the capital of Sichuan province, has an ancient rivalry with Chongqing, a city to its south-east. Residents of Chongqing accuse their Chengdu cousins of being pompous(自大的).
The two cities are among many in China with their own styles of hotpot. The stories behind these dishes reveal how different regions like to see themselves. Chongqing’s is said to highlight the ingenuity(心灵手巧) of the proletariat(工人阶级). Other places describe their hotpots as the sophisticated food of emperors. Some say theirs have military origins: warriors on the march boiling scraps in their helmets. Hotpot contents are equally diverse. To keep warm in winter, Beijingers boil fatty lamb in a berry broth.

Germs that can make people sick are common in the guts of healthy poultry and are legally allowed to be on raw turkey and chicken. The assumption is that nobody eats their poultry raw, and that thorough cooking will kill the bacteria.
The do — not — wash raw poultry advice from the USDA is relatively new and perhaps hasn't caught on because it goes against the common belief that washing makes things clean, said Chapman. Benjamin Chapman, a study author and food safety expert at North Carolina State University, said the instinct to wash raw poultry goes back at least decades when people relied more on visual clues to spot problems with poultry. Meanwhile, washing hands and surfaces are also important.
But food preparation is a complicated act, and germs from poultry can be spread even if it's not washed, especially when birds are removed from packaging.
The USDA-funded study stresses that point. Researchers sprayed raw chicken with a harmless strain of E. coli (大肠杆菌)and watched volunteer cooks at test kitchens. Among those who washed their raw chicken, about a quarter ended up spreading the bacteria to their lettuce. But even some of those who did not rinse the chicken got germs on the lettuce. And there are other opportunities for germs to survive on turkeys: melting and cooking.
To ensure a bird is thoroughly cooked, they say to use a thermometer to check that the deepest and thickest parts of it have reached 165 degrees. Even after the meal is cooked, you aren't out of the danger zone. To keep turkeys and other leftovers safe, experts say they should be refrigerated after two hours.

The burden of making sure games are played according to the rules and that the officiating (裁判) is accurate is now being taken out of human hands and falling more and more into the lap of technology. It’s called the video replay.
The National Football League is expanding its replay system this upcoming season to include pass interference (传球干扰). Major League Baseball now relies on it for safe-or-out and home run calls. If you’ve been watching the FIFA World Cup, you may have noticed that the Video Assistant Referee (VAR) played a key role in almost every game. And in the Kentucky Derby, a horse was disqualified for knocking another horse. No one knew why until a video replay confirmed the call and controversy was avoided.
However, many purists—those who want people to follow rules carefully and do things in the traditional way—especially in soccer, argue it’s not the way the game was invented, and that the video replay is tainting the sport. But don’t you want to see the proper application of the rules throughout the games? I know I do. Yes, it can slow the game down, but I feel it is worth it. If technological advancements allow fans watching from home to spot mistakes instantly, those same views need to be available to the officiating crews. Another example occurred in the most recent National Football Conference (NFC) Championship Game between the Los Angeles Rams and the New Orleans Saints. When obvious pass interference was committed by the Los Angeles Rams player Nickell Robey-Coleman, with just 109 seconds to play, no flag was raised on the field. It weakened the New Orleans Saints spirits. The Los Angeles Rams won a 26-23 overtime victory. The no-call deeply angered the public. The video replay showed the referees had just missed one of the most apparent pass interference calls.
There are no easy answers regarding replay technology and whether it is a curse (魔咒). But for me, keeping the officiating honest and on task is the right step in limiting controversy.

'' The future city competition puts young teens in charge of building a city that can respond to a challenge. This year's challenge is resilience (重建能力) after a natural disaster like an earthquake. The models must be built with recycled materials for less than 100 dollars.
But behind this is some serious engineering. Each group has to present its city's resilience features to the audience and judges. ''The sea walls are made with concrete and steel to reduce the tidal waves impact on the shoreline. '' And it's about more than just infrastructure(基础设施). Judges want to know that you've thought about your citizens, too. ''If someone wants to design a building that's 50 floors, we make an agreement like maybe 20 of them have to be low-income housing. '' Engineering Outreach Group Discover (EOGD) has run the competition for nearly three decades. Director of programs Thea Sahr says it is an effective teaching tool. She tells of one boy who asked his teacher when they would get back to the real learning. ''You know the kind we were just sitting there reading the books and telling you the answers, '' and she said ''well what do you know about storm water that you didn't know last week. What do you know about scale? And you're having a really good time while you're doing it. '' He says this is learning. '' I want to do more of this. ''
The winners take home 7,500 dollars for their school’s science program, and get a trip to a science focused summer camp. This year's winners from Warwick Middle School in Pennsylvania say they also learned real-world skills like dealing with failure. ''The hardest part was trying not to get frustrated when something didn't work. And I think our team members really contributed to that. Communication is key. '' Listen, when you're building a city, engineering is just part of it.
