4 . Chinese Medicinal Food

Chinese medicinal food (药膳) is a long standing tradition. Early records show that it was in use as far back as the Han Dynasty. Through much improvement during the following dynasties, it has developed into a practical science of nutrition.     1     However, it is a special cuisine made from food and traditional medicine following the theory of Chinese medicine.

Chinese medicinal food not only has become the means of keeping healthy among the people of China, but also spread abroad, especially into Southeast Asia.     2    

There is a wide choice of foods that are used in many different ways to help keep healthy and well-being. It is estimated that there are more than 600 different kinds of resources ranging from fruits, vegetables, meats and seafood.     3     Many of these will be unfamiliar to foreigners who may not like to try them, but all are quite precious and effective in the field of medicinal food. Many different medicinal foods are used to add to the appeal and to strengthen effects of the cuisine. Wine, sugar, oil, salt, vinegar and honey are used in the cooking process.

    4     For over three thousand years, Chinese cuisine is based not only on skill and using the best quality food material but also on applying the ancient art of balancing the yin and yang qualities in the food.

The Chinese classify each type of vegetable and meat in terms of yin and yang, and combine vegetables with meat in such a way that each cooked dish will be balanced. Also, Chinese people know that food may be changed from one to the other depending on the way it is cooked.     5

5 . Over the centuries the French have lost a number of famous battles with the British. However, they’ve always felt superior in the kitchen. France has for centuries had a reputation for cooking excellence, and Britain for some of the worst cooking in the world. But according to a recent survey, that reputation may no longer reflect reality.

In the survey, 71% of the Britons said they cook at home every day, while only 59% of the French said they cook daily. British home cooks spend more time cooking each week and also produce a greater variety of dishes than French home cooks.

The reaction in London was predictably enthusiastic. British food has greatly improved since the 1990s. Once upon a time, the menu for many family meals would have been roast beef, potatoes and over-cooked vegetables, but not now. Some French people say that the survey did not show the whole picture. They agree that during the week French women don’t cook as much as they used to because most of them work and don’t have much time. They tend to buy ready-made or frozen dishes, but many of them make up for it on the weekend. There’s also a difference between Paris and the countryside. It’s true that people in Paris don’t cook much, but elsewhere, cooking is still at the heart of daily life.

For many French people, opinions about British food have not changed. When Bernard Blier, the food editor at a magazine, was asked about British food, he replied: “I don’t go out of my way to try it. It is not very refined. You can say that I’m not a fan at all.”

6 . Many of us love July because it’s the month when nature’s berries and stone fruits are in abundance. These colourful and sweet jewels form British Columbia’s fields are little powerhouses of nutritional protection.

Of the common berries, strawberries are highest in vitamin C, although, because of their seeds, raspberries contain a little more protein (蛋白质), iron and zinc (not that fruits have much protein). Blueberries are particularly high in antioxidants (抗氧化物质). The yellow and orange stone fruits such as peaches are high in the carotenoids we turn into vitamin A and which are antioxidants. As for cherries (樱桃), they are so delicious who cares? However, they are rich in vitamin C.

When combined with berries of slices of other fruits, frozen bananas make an excellent base for thick, cooling fruit shakes and low fat “ice cream”. For this purpose, select ripe bananas for freezing as they are much sweeter. Remove the skin and place them in plastic bags or containers and freeze. If you like, a squeeze of fresh lemon juice on the bananas will prevent them turning brown. Frozen bananas will last several weeks, depending on their ripeness and the temperature of the freezer.

If you have a juicer, you can simply feed in frozen bananas and some berries or sliced fruit. Out comes a “soft-serve” creamy dessert, to be eaten right away. This makes a fun activity for a children’s party; they love feeding the fruit and frozen bananas into the top of the machine and watching the ice cream come out below.
