1 . Who is Li Ziqi? For 7 million watchers on YouTube and 20 million micro bloggers on Sina Weibo, that’s an easy question to answer. She holds an account on each of the two platforms, and uploads her videos about the detailed cooking processes of various kinds of traditional Chinese food.
Li is a craftsperson in a rural area of Southwest China’s Sichuan province. Different from others, she is fond of showing the whole process from the field to the table. For example, in her video about spicy tofu, she starts with harvesting the soy beans, grinding them into powder and making tofu, and then cooks it. Her works also include building a homemade oven to bake bread.
Like the rest of us, Li was probably not born with skills to create the things we see in her videos, but she uses everything and everybody around her as a teacher. Li never attended college, but she shows us how useful self-learning can be in an age of plenty of learning resources.
Li lets the world see one of the most important aspects of the Chinese people, how they live their daily lives. She lets the world know that Chinese people love good food and are good at making art out of even simple raw materials, which have caught the hearts of her global audience.

One day, I was cooking in the kitchen when the telephone rings. I went to answer it immediately. She was my close friend, Lisa. When we were talking on phone, the fire alarm sounded. I ran back to the kitchen only to find the room full of smoke and the beef bad burnt. I quickly turned off the gas, opening all the windows, but then went out of the house. In my surprise, two fire engine were outside my house. I was quite worry. I told the firemen that it was my careless cooking that it caused the heavy smoke.

If you’ve never eaten it (although you probably have), porridge is a type of food served for breakfast. It is usually a type of grain, like rice or oat (燕麦), mixed with either milk or water, and often heated up. It is often thicker than liquid, but not solid and is very easy to digest, so it's a better option for people who are ill, and it provides long-lasting energy for the day.
Porridge preparation--the amount of ingredients (配料) and cooking time—depends on what you choose to use as your porridge base. If I'm cooking for myself, I put a very big handful of ‘rolled’ oats in a saucepan, add a little bit of water and about 200ml of milk, and let the mixture boil. I stir the porridge constantly, and it takes about five to ten minutes to cook.
Once it's cooked, the fun part is adding the flavors. Porridge alone doesn't have a very strong flavour. Although some people think this makes porridge boring, I think this is what makes porridge exciting! It is like a blank piece of paper—you can add almost anything you want to the porridge base. Greens, nuts and dried fruits are very healthy options to add and can give you energy for the day. But if you don't like these, or you're allergic, then honey and chocolate are also very tasty options. (Just don’t add to much!)
One of the best things about porridge? You can make it almost anywhere in the world. Either oats or rice or both are “staple foods (主食)” for many people across the world. You can usually buy big bags of either, then add local ingredients to make your porridge interesting—whatever is cheap and convenient to find, wherever you are. I am currently in Mexico, and I love to heat my oats up with milk, then mix in peanuts and pumpkin seeds and cacao nibs, and I put a layer of sugar over the top to make my porridge sweeter.

8 . Astronauts aboard the International Space Station (ISS) recently tested an oven they used to bake five chocolate chip cookies. We now know the results of that experiment: the cookies took a lot longer to bake in space than on Earth. The cookies that came out best required two hours of baking time inside the International Space Station. The baking time for cookies on Earth is generally only about 20 minutes.
The cookies returned to Earth earlier this month aboard a SpaceX-built spacecraft that splashed down in the Pacific Ocean. The cookies are the first food baked in space from raw food materials. They remain frozen in a laboratory in Houston, Texas. The American company Nanoracks designed and built the cookie oven. Hilton DoubleTree hotels supplied the cookie dough.
The makers of the oven did expect some difference in the baking time in space, but they were surprised that that difference was so large. "There's still a lot to look into to figure out really what's driving that difference, but definitely a cool result," said Mary Murphy. She is with the company Nanoracks, which is based in Texas. Murphy said the baking results will continue to be examined in order to better understand why space baking took so much longer. In addition, researchers will study the effectiveness of the baking tray, which was designed to work in microgravity conditions.
The five chocolate chip cookies were frozen when they were sent to space. Each had to be baked separately in the oven. Italian astronaut Luca Parmitano took charge of the baking experiment in December. He reported that the first cookie stayed in the oven for 25 minutes at 149 degrees Celsius. When it came out of the oven, it was seriously under-baked. For the next two cookies, Parmitano more than doubled the baking time. Those cookies came out better, but were still under-baked. The fourth cookie stayed in the oven for two hours, after which Parmitano was able to report success. "I can't tell you whether it's cooked all the way or not, but it certainly doesn't look like cookie dough anymore," he reported to controllers back on Earth. For the fifth cookie, Parmitano turned the oven temperature up to 163 degrees Celsius and baked it for 130 minutes. This time, he reported the best baking results.
No one has tasted the space-traveling cookies just yet. Organizers of the experiment say additional testing will need be carried out to determine whether they are safe to eat.

I like fooling about in the kitchen, to be honest. Last night, tired of too many visits to over-priced restaurants, I tried to do something a bit clever with meats and vegetables. It was all right, I suppose. I mean, my guest and I both ate it, but in a slightly awkward sort of way. It was all a bit brown. More to the point it took hours and hours that could have been spent on something more meaningful, such as mending the cooker. There are also three dead motorcycles in the garage, and they’re not going to repair themselves.
