Milk, it comes from cows, right? Well, not all the milk you see on supermarket shelves is from cows. These days we see many plant-based alternatives to dairy, such as oat, pea and soya milk. But why would someone stop drinking their full-fat, semi-skimmed or skimmed cow’s milk and trade it for one of these? There are many reasons why someone might try alternative milks.

Some people believe the alternatives are healthier than milk from cows. Those with lactose(乳糖) intolerance or thinking about becoming vegan might start drinking alternative milks. Also, concerns about the impact of dairy farming on the environment could be a factor. Whatever the reason, there are many alternatives to dairy out there for us to consume. But what are the differences between these other options and regular cow’s milk? Soya milk is one common alternative. According to some sources, such as healthline.com, it contains a similar amount of protein to regular milk. It is also lower in calories than some cow’s milk, which could be good for those on a diet, and often comes strengthened with things like calcium and various vitamins.

So, all good? Well, soya, according to foodallergy.org, is one of the nine foods which cause the majority of allergic reactions, such as lactose intolerance and nut allergy. Almond milk is a low-calorie, low-fat drink and is naturally lactose free and has a slight nutty taste. When unsweetened, it also has lower levels of carbohydrates and sugars than some dairy options. However, even when strengthened, it doesn’t provide the levels of protein seen in soya or regular milk. Then there’s coconut milk, which is low in calories and may affect people with lactose intolerance as much as other options, but is lacking in protein.

Whichever plant-based milk you choose, there are positives and negatives. Dieticians agree the most important thing is getting a healthy balanced diet which won’t trigger any allergies and comes with all the minerals and vitamins you need. And at the end of the day, it may just come down to which one you think tastes better.

【推荐1】Next time you make a salad, you might want to consider adding mushrooms to it. That's because higher mushroom consumption is associated with a lower risk of cancer, according to a new Penn State study.

The systematic review and meta-analysis examined 17 cancer studies published from 1966 to 2020. Analyzing data from more than 19,500 cancer patients, researchers explored the relationship between mushroom consumption and cancer risk.

Mushrooms are rich in vitamins, nutrients and antioxidants. The team's findings show that these super foods may also help guard against cancer. Even though king oyster mushrooms have higher amounts of the amino acid ergothioneine than white button mushrooms, the researchers found that people who incorporated any variety of mushrooms when having meals daily had a lower risk of cancer. According to the findings, individuals who ate 18 grams of mushrooms daily had a 45% lower risk of cancer compared to those who did not eat mushrooms.

“Mushrooms are the highest dietary source of ergothioneine, which is a unique and cellular protector;” said Djibril M. Ba, a graduate student at Penn State College of Medicine. “Refilling antioxidants in the body may help lower the risk of cancer.”

When specific cancers were examined, the researchers noted the strongest connections for breast cancer as individuals who regularly ate mushrooms had a significantly lower risk of breast cancer. Ba explained that this could be because most of the studies did not include other forms of cancer. Moving forward, this research could be helpful in further exploring the protective effects that mushrooms have and helping to establish healthier diets that prevent cancer.

“Overall, these findings provide important evidence for the protective effects of mushrooms against cancer' said coauthor John Richie, a Penn State Cancer Institute researcher and professor of public health sciences. “Future studies are needed to determine the working system of mushroom and specific cancers that may be impacted.”

【推荐2】Coffee is an essential part of Italian culture and since arriving here over six months ago, I have definitely drunk a lot of it!

Of course, coffee is also very popular in the UK but coffee culture in Italy is a completely different story. In Italy, when you order a coffee in a cafe or bar, you are presented with a tiny, bitter espresso. This is' normal coffee for Italians and they are not so interested in the huge coffees that we drink in the UK. In addition, while take-away coffee is extremely popular among the British, it is not very common at all in Italy, especially in non-touristy areas. Generally, Italians prefer to drink their tiny coffees while standing at the bar and,for many, this short break is an important part of their day.

Typically, breakfast in a bar in Italy involves a coffee and a pastry. I have been attracted by the lovely cafes in the Italian town I'm living in. These cafes sell all sorts of mouth-watering pastries, either plain or filled with cream, chocolate, jam or Nutella, as well as delicious coffee. Cappuccinos are very popular at breakfast time and, for me, a creamy cappuccino and a pastry full of Nutella is the perfect way to start the day. I think it's nice to head to a bar to grab a coffee and pastries for breakfast before work and it's luxury to take more time to enjoy such a breakfast at the weekend.

Finally, I have found that coffee in Italy is so much cheaper than coffee in the UK. Normally, an espresso or a macchiato(an espresso with a small amount of milk added)costs around a euro and a cappuccino about 1.50! They are small, of course, but this means that in Italy it is possible to go out for coffee regularly without breaking the bank.

1. What does the author intend to tell us in Paragraph 2?
A.Espresso is very popular in Italy.
B.Italians prefer small coffees to large ones.
C.Coffee culture in Italy is very different from that in the UK.
D.Italians have more time spent in cafes than the British people.
2. The underlined word "pastry" in Paragraph 3 probably is ________.
A.a container to provide creamB.some attractive fruit
C.a powder to be mixed with coffeeD.a dessert served for breakfast
3. Which of the following best describes coffee in Italy?
A.Drinking coffee in cafes is expensive.
B.Coffee is not allowed to be taken out.
C.Italian coffee is mainly imported from the UK.
D.Coffee often comes along with other food as breakfast.
4. What is the author's attitude towards Italian coffee?
A.Positive.B.Disapproving.C.Doubtful.D.Uncertain.

【推荐3】If you think of pumpkins as an orange-colored squash that's carved as the key ingredient for holiday season pies, you wouldn't be wrong.

But there's much more to pumpkins, which are full of nutrients that provide an impressive collection of health benefits, says Lisa Jones, a registered dietitian based in Philadelphia. Pumpkins may be good for carving, but they're even better for a variety of healthy nutrients, she says. “Pumpkins provide a diverse variety of nutritional benefits in addition to being an ingredient in pies or festival decoration.”

The best part about pumpkin is that it's so easy to work it into your daily food. When preparing various dishes, add pumpkin to things like soups or bake with it in breads. There are so many things you can do with pumpkin beyond pumpkin pie. Pumpkins are seasonal, ripening in fall. But you can get pumpkin products, like canned puree or soup, in many stores throughout the year.

Consuming pumpkin can help fight cancers, says Mahmoud Ghannoum, professor and director in a medical center. Pumpkins have plenty of beta carotene, which is an antioxidant, playing an important role in protecting the body from cancers. Pumpkin is a good source of minerals, vitamin C and fiber, all of which are associated with heart health and keep your skin strong, healthy and, hopefully, wrinkle-free. The squash also contains a healthy amount of vitamin E, which helps reduce damage caused to your skin by ultraviolet light. Besides, the fiber in pumpkin can help you feel full ——which, in turn, boosts your odds of consuming healthy portions of food. Every half-cup of cooked pumpkin provides about 3 grams of fiber. Pumpkins are also low in calories: a cup of cooked pumpkin contains about 50 calories, which helps with weight management.

1. What does Lisa Jones think of pumpkin?
A.It can be used in various western dishes.
B.It is more than used in dishes or decoration.
C.It is easy to carve pumpkin into diverse shapes.
D.It suits people from diverse cultural backgrounds.
2. Which of the following is the biggest advantage about pumpkin?
A.It ripens in fall.B.It can be bought all over the year.
C.It is not hard to add it to daily dishes.D.It can be made into various products.

A.The classification of pumpkin.B.The characteristics of pumpkin.
C.Different ways to consume pumpkin.D.The potential benefits of consuming pumpkin.
4. Where is the text most likely from?
A.A review.B.A guidebook.C.A fiction.D.A website.
