Scientists have developed a pair of chopsticks, which can make food taste saltier, sour or bitter without the need for extra seasoning (调味). They are also working on a spoon and fork that could make food taste spicier or sweeter. This “digital seasoning” technology could help food manufacturers and restaurants to reduce the amount of salt they put into food without relinquishing taste.
They work by delivering pulses of electricity to the tip of the tongue to stimulate the tastebuds(味蕾). Dr Nimesha Ranasinghe, an assistant professor who led the work on the electric cutlery, said, “This technology is aimed at creating a virtual taste sensation.”
Some Chinese takeaway food and ready meals were recently found to contain up to 11 times more salt than a bag of crisps — more than half of an adult’s daily allowance. Salt is known to be linked to serious health problems like heart disease and stroke.
But using a pair of electric chopsticks could help cut salt levels without influencing the taste, said Dr Ranasinghe. The technology, which Dr Ranasinghe initially developed while at the University of Singapore, works by installing two electrodes (电极) into each chopstick or the end of a spoon. These electrodes send a weak current through the tip of the tongue when they touch it to stimulate the taste buds.
By controlling the frequency and strength of the electric current, the researchers can stimulate either sourness, saltiness or bitterness. They say up to 80% of people experience changes in saltiness and sourness with the devices and 70% can sense changes in bitterness.
Dr Ranasinghe said he was also working on ways of imitating sweetness and spiciness by rapidly heating and cooling the tongue. It could lead to a spoon that allows desserts to taste sweet while having lower sugar levels or a fork that can give a curry extra heat without the need for extra chilies (辣椒). Dr Ranasinghe said: “We have some early findings of imitating sweetness, a mint-cool sensation and hot or spicy sensations.”

In today’s competitive world, the emphasis in athletics is so often put on breaking records. A runner’s creed: “I will win; if I cannot win, I shall do my best.” Those inspirational words, and others like it, fuel the soul of the long distance runners. Competing not only with one another, they hope to achieve their own “personal best”.
For one teen Brandon Schutt, a student in Omaha Burke High School, had been looking forward to his final cross-country race before graduating from high school. He was determined to finish the race with a respectable enough time to qualify for the upcoming state meet. Like him, all other runners were accumulating strength for a take-off.
One runner, Blake Cerveny, whose record was the fastest, tried to beat his own best. After a fast start, he continued to push himself to the limit. If he could hold on to his lead, there was no doubt that he would win. However, with less than 400 meters to go, Cerveny’s legs cramped up(抽筋)and failed him. Resolve to finish,Cerveny rose up from the ground, and continued on his way,only to fall again.His legs had simply given out. Seconds later, he lay curled on the ground, frustrated and disappointed. Other runners surpassed Cerveny with-out stopping. His will to go on faded from his body gradually.
A few moments later, Brandon, running at a very aggressive speed, drew near Cerveny. He had actually been in the same position three weeks prior when he wasn’t able to complete a race. He felt awful about not finishing. He had trained so hard for this final race in high school, to hopefully qualify for the state meet. So this time, he had made up his mind to prove himself under no circumstances.

4 . A method to transform a commonly thrown-away plastic to a resin(树脂) used in 3D printing could allow for making better use of plastic waste. A team of Washington State University researchers developed a simple and efficient way to transform polylactic acid (PLA) (聚乳酸),a bio-based plastic used in products such as filament,plastic silverware and food packaging to a high-quality resin.
“We found a way to immediately turn this into something that’s stronger and better, and we hope that will provide people with the inspiration to upcycle this stuff instead of just throwing it away,” said Yu-Chung Chang, a postdoctoral researcher in the WSU School of Mechanical and Materials Engineering and a co-corresponding author on the work. “We made stronger materials just straight out of trash. We believe this could be a great opportunity.”
Although it’s bio-based, PLA, which is categorized as a number 7 plastic, can float in fresh or salt water for a year without degrading. It is also rarely recycled because like many plastics, when it’s melted down and re-formed, it doesn’t perform as well as the original version and becomes less valuable.
“It’s biodegradable and compostable, but once you look into it, it turns out that it can take up to 100 years for it to rot away in a landfill,” Chang said. “In reality, it still creates a lot of pollution. We want to make sure that when we do start producing PLA on the million-tons scale, we will know how to deal with it.”
While the researchers focused on PLA for the study, they hope to apply the work to poly-ethylene terephthalate(PET)(涤纶树脂), which is more common than PLA and has a similar chemical structure and presents a bigger waste problem. They have filed a temporary patent and are working to further improve the process. The researchers are also looking into other applications for the upcycling method.

Spreading Kindness Around the World
“Mom, we want to write a book,” my five-year-old twins, Delilah and Nathenial, told me one day.
I looked at my kids curiously. “What do you mean?”
Are they joking? I thought. I don’t know the first thing about getting a book published. Still, I didn’t want to squash their creativity. “Okay…what do you want it to be about?”
“An envelope that travels all over the world spreading kindness,” Nathenial said, his eyes shining.
Over the next few months,my kids dreamed up more of the story. The main characters were a pair of twins just like them. I wrote down everything, making sure not to miss a detail. The kids even sketched scenes with colored pencils.
The theme of Delilah and Nathenial’s story was being kind to others, no matter how little you might have. I wondered if that was partly because I’d told them what my life had been like when I was their age.
I remember my father died when I was five. My mom, younger sister and I ended up on the streets,sleeping in parks and homeless hotels for more than a year. I found myself standing in any line I could to get donated food.
Despite—or maybe because of—our hardships, I tried to help others. I handed out snacks to people who were homeless, took in stray (走失的) animals and helped give out donations at a church where the woman in charge would send me home with food. After I gave birth to our twins, I not only taught them to be kind but also to make sure they knew that anything was possible.
I guess I did a pretty good job, because here the twins were, at age five, managed to write a book. After we self-published The Magical Envelope last Children’s Day, the kids decided to donate it to the kindergarten in our community.

Rosa was spending the day with her family at Thetis Lake when she heard a man crying out for help. The lake has a sudden drop-off, and the man was desperately trying to keep himself, his wife, and their son afloat. Rosa handed off her 4–month–old daughter to her mother and dashed down the hill and into the water.
Without thinking, Rosa dove into the water and swam hard for the family. When she reached them, they were so panicked that they repeatedly pushed her under the water, but Rosa didn’t give up. She tried to remember her lifeguard training—which was a long time ago when she was a teenager. Rosa was aiming for the drop-off ledge (平台), hoping to get the adults to a spot where they could touch the bottom. Yet as she approached the drop-off, Rosa couldn’t summon the strength to haul them all up. That’s when she heard the bystanders calling out encouragement from the shore. They responded by forming a human chain to drag Rosa and the family to shore!
Once they were safely out of the water, the family expressed their gratitude to Rosa and the others while gasping for breath. Rosa was relieved that those long–ago lessons returned to her when she needed them most, especially because she was never formally taught how to rescue groups! The heroic mom has now made it her mission to improve the safety of Thetis Lake. She’s requested more signage about the water drop–off and is campaigning to get lifeguards at beaches in the region.
Rosa insists she was just at the right place at the right time and says anyone would have done what she did, but we know a hero when we see one! Thank goodness this tough mother was there when that family needed her.
