3 . A man recently helped a woman, who had been knocked down by a car in Taizhou, Jiangu province, reach a hospital. But before doing so, he took a photograph of the scene with the woman to avoid being charged with knocking her down. Several similar cases were reported across the country during the Spring Festival, leaving people with mixed feelings, says Cao Pengcheng in an article in People's Daily.
Altruism(利他主义) is part of Chinese culture, and there is no lack of good Samaritans(乐善好施者) in the country. But recently, says Cao, some good Samaritans were blackmailed by the people who they helped. It made altruism a tough issue.
Cao says that it is a good thing for people to become more business-minded.but it is one thing to do as cost-benefit analysis (分析) in business, and quite another to measure whether a person in need is worth helping. I people always make such materialistic calculation(物质计算),they will further lower social and moral (道德) standards.
Fortunately, says Cao,there are still people like the man in Taizhou who deepen our belief in altruism and kindheartedness by continuing to help others, despite knowing that the existing system and rules in the county do not offer enough protection for good Samaritans.

7 . Su Shan is a delicacy made with milk and cream that looks like shaved ice (刨冰). Poet Wang Lingran from the Tang Dynasty (618-907) described how people made and enjoyed Su Shan in his poem Ode to Su He Shan. According to the text, sugar was added to Su Shan that was shaped into many forms. Sometimes, Su Shan was decorated with flowers and leaves to make it more beautiful.
“It is neither solid (固态的), nor watery and disappears once it touches teeth,” the poet wrote. The Su Shan in his poem was thought by many experts to be an early form of ice cream. However, only the nobles (贵族) were lucky enough to have large iceboxes to create it in summer.
Although there were no fridges in ancient times, iceboxes to store ice cubes in summer had become very common in rich families by the Tang Dynasty. At that time, people either had ice water or small pieces of shaved ice.
People could easily buy iced drinks on the street during the Song Dynasty (960-1279).As a community service, some rich people even provided free ice water and medicine on the street for free. Ice water sold during the Song Dynasty was often added to mung beans (绿豆) to help prevent heat stroke (中暑).

8 . The paiche, a huge, air-breathing fish, is one of the largest freshwater fish in the word. which has fed Amazonian people for thousands of years. Fully grown, it can reach seven feet long or more and it can reach anywhere from 200 to 400 pounds.
The paiche isn’t only famous for its size. Known as Amazonian people’s favorite food, this fish has been around for a long time. so it’s considered a living fossil, whose oldest fossil dates back to 23 million years ago.
This old fish stands out in many other ways, including the need to surface (浮出水面) for the air. The ability to breathe air is helpful in waters of the Amazon with little oxygen, but makes it easy for the paiche to get caught. When the fish surfaces, it often takes in air with a loud noise that local fishermen can recognize at a distance. Amazonian fishermen have enjoyed its tasty meat for a long time, but catching it in such large number has been in doubt.
Thankfully, protection efforts, combined with a large increase in farmed paiche, have made sure that this ancient fish will not disappear any time soon. And that’s a great thing for Amazonian cuisine (烹饪),as the paiche is a surprisingly tasty fish, whose meat stays tasty in most preparations, whether roasted or steamed (蒸).
The paiche near the source will be the best. You can find it in markets like Mercado de Belen in Peru, and the Mercado Municipal in Brazil. If you can’t make it to South America, you can also find paiche meat in stores like Whole Foods.

9 . It happens every spring. Flowers suddenly come out everywhere on the same day, as if they made an appointment with one another. But how exactly do plants “know” when to flower?
It is a question that has puzzled biologists for years. But according to Science Daily, a US research group may have finally answered it —the secret lies in a protein (蛋白质) called FKF1. This allows plants to sense the differences in day lengths so that they can tell the seasons are changing.
Researchers discovered the FKFI protein when they were studying a plant called Arabidopsis. They found that the FKFI protein is a photoreceptor (感光器). This means it is sensitive to, and can be activated by sunlight.
“Plants produce this protein every day in the late afternoon throughout the year. If there is no light at this time, for example, in winter when the sun goes down early, the protein won’t be activated,” explained Takato Imaizumi, the leader of the study. “But when spring comes and the days get longer, the FKF1 protein can be activated by daylight and the plants ‘know’ it is time to flower.”
Although researchers have only studied how the FKF1 protein works in the Arabidopsis, they believe that the process is similar in other plants, including crops like rice and wheat. This could be useful to the agricultural industry in the world.
