Too Good To Go

Around the country, apps that connect customers to businesses with leftover food have begun to spread. The     1     is simple: Restaurants and grocery stores throw away huge amounts of food every day. Rather than     2     it, apps like Too Good To Go and Flashfood help businesses sell it at a reduced price. They claim that the businesses and buyers are helping the environment because the food would otherwise become food waste, a big contributor to climate change.

In the United States, customers in 12 cities can look through restaurants and stores on Too Good To Go, then reserve “surprise bags” that typically cost about $4 to $6 and contain food that would have been     3     at roughly three times that amount.

Several food waste experts expressed     4     that these types of apps could help limit the amount of wasted food. And even though charitable organizations often redirect unwanted food from restaurants and grocery stores to food banks and community kitchens, there’s space for all of these kinds of solutions to     5    .

One complication is that, according to interviews with several companies selling on Too Good To Go, at least a few items for sale there aren’t     6     what buyers might think of as “food waste.” The owner of a Baltimore dessert shop said she considered the app a(n)     7     tool to reach new customers by selling what she called “little samples.” A beer company owner said he used the app to sell     8     products, but also sold new flavors there in hopes of attracting new customers.

Mr. Crummie, the Too Good To Go director, said the app     9     this type of behavior. “If somebody is paying $5, they should be receiving $15 worth of food,” he said. “So it’s not a(n)     10     platform.”

Kweichow Moutai, the company that makes the eponymous (同名的) liquor, is China’s most valuable firm outside of technology. Globally, its market cap has surpassed Coca-Cola, which had long held the     1     as the world’s largest beverage maker.

Apart from the Chinese diaspora (移民社区), however, Moutai is still     2     unknown overseas. Almost all — about 97% — of its sales come from China alone, according to its financial reports.

So how is a company that sells its products     3     in just one country now worth more than some longstanding global corporations? And can Kweichow Moutai succeed in     4     to non-Chinese consumers?

Moutai is named after Maotai, a picturesque small town in the southwestern Chinese province of Guizhou. This is where the company says its baijiu — distilled (蒸馏) from fermented (发酵的) sorghum and rice — gets the magic     5    .

According to the Moutai Museum, environmental factors, such as the town’s climate and seasonal changes in the water of the local river, help give the liquor its unique taste and is     6     to the production process.

Known as the favorite tipple of Mao Zedong, founder of Communist China, and as the ‘drink of     7    ,’ it was famously used to welcome former US President Richard Nixon on his historic trip to China in 1972, and again in 2013 when Chinese President Xi Jinping met with his US counterpart, Barack Obama, in California.

Being part of so many major public events in China ‘has really     8     the brand in the national consciousness,’ said Cavender, the managing director of China Market Research Group.

Today, the brand is seen more as a     9     status symbol. Some customers buy it not to drink, but to keep as investments. Limited-edition cases are collected and showcased by international auction houses, like Christie’s, which says that some bottles can     10     more than $40,000 each.

“It’s also been a tremendous advantage during an economically tough year: wealthy consumers who are spending less on travel may splurge more on liquor,” Cavender said.

Quinoa, of which both the seeds and leaves can be edible, is a crop native to the Andes Mountains. It took off in richer countries in the 1990s after NASA researchers recommended it as part of a potential space-colony diet. Over the past decade, quinoa, one of the leading crops that     1     on Bolivia’s high plains, 13,000 ft. above sea level, has become a premier product for foodies, health nuts and fair-trade enthusiasts. The gluten-free staple — in Bolivia it is produced solely by small-scale farmers and 90% is     2     — often decorates plates from celebrity chefs like Giada De Laurentiis and Bobby Flay and has inspired entire cookbooks     3     to Salads, soups and stuffing boasting its nutritional goodness. It’s an unaccustomed role for such a humble crop, which poorer Bolivians often grew and ate instead of buying rice. “It was always comida para los indios (food for Indians),” says Benjamin Huarachi, a member of the board of Bolivia’s largest quinoa growers’ association, “Today it’s food for the world’s richest.”

It also provides food for thought about the     4     that arise when rich nations try to support farmers in the developing world. The colorful tall tufts (丛生植物), which     5     one of the healthiest foods on the planet, have become Huarachi’s golden goose. As global food prices have risen, the price of quinoa has tripled in the past five years, to $1 per lb., a benefit to growers in the poorest region of South America’s poorest country. “Now we’ve got tractors for our fields and parabolic antennas (抛物面天线) for our homes,” he says.

And trouble with the neighbors. In an economy dependent on unsteady commodity     6    , quinoa has made farmers richer, but it has also become an out-of-reach luxury for many Bolivians and     7     violent conflict. In February hundreds of farmers clashed over prime quinoa-growing territory, and dozens were injured. The high price of quinoa has     8     cut domestic consumption, sparking concerns about malnutrition, with many farmers scrambling to export all their quinoa, even supplementing their diets with foods like pasta.

The series of problems raises concerns about whether the satisfying act of buying fair trade — which aims to help small farmers gain     9     to higher-end consumers abroad — can do more harm than good for the poor in developing countries. “When you transform a food into a commodity, there’s     10     breakdown in social relations and high environmental cost,” says Tanya Kerssen, a food-policy analyst for the food and development institute Food First, based in Oakland, Calif.

Plant-based Milk

There are nutritional differences between types of milk, from oat to soy to cow’s. Plant-based milks have been growing in     1     for years, but the nutritional content of different milks and milk alternatives vary, with disagreements between brands too. The global dairy alternatives market is     2     to grow from $22.25 billion in 2021 to $53.97 billion in 2028, according to a report by Fortune Business Insights. In February 2022, the world’s first potato milk launched in the UK, which bills itself as “the most     3     plant-based dairy alternative on the market.”

While some people choose dairy alternatives, cow’s milk is an excellent     4     of calcium, protein, and vitamin D. It’s also working better than water when people feel thirsty, according to a small study by St Andrews University in Scotland. However, some people stay away from dairy because of intolerance of the mouthfeel or environmental concerns, and for some, the     5     factor is health. Nutritional reports of milks vary, with some offering more fiber, fat, protein, carbs, sugar, and calories than others.

Dietitians recommend choosing fortified plant-based milks. Plant-based milks are not     6     “healthier” than dairy, and when following a plant-based diet, dietitians recommend ensuring your dairy-free milk alternatives are fortified with essential vitamins and minerals. “Fortified means that they are added by the manufacturer and so will be on the ingredients list, or advertised on the front,” dietitian Nichola Ludlam-Raine     7     told Insider.

“Choose milk alternatives that are fortified with vitamins such as vitamin B12 and vitamin D, in addition to the minerals calcium and iodine,” she said. The     8     content of milk varies in terms of protein, carbs, and fiber. Cow’s milk, for example, contains lots of calcium and vitamin D, as well as protein. Soy milk is often fortified with calcium, and is also high in protein. For the purpose of this     9    , Insider selected popular brands of each milk, selecting     10     options wherever possible, per cup. Here’s some nutritional information on our website to bear in mind when choosing which milk to have in your coffee, on your cereal, or alongside a cookie.
