“The flavors are big and bold that’s the point. The idea is to show there’s a lot more going on when nature gets to farm it,” said Jim Parum, creator of the Forage Box. Since he started the project, he spends his days foraging for ingredients in environments such as the countryside, forests and the coast. The idea of the Forage Box is not to send out meal boxes but new ingredients, so information about cooking these wild items is also offered in the boxes. 7 . Three Cooking Myths
As a child, one of the unbreakable rules was “no swimming for 30 minutes after eating”. This was like a gospel(福音、信条), seriously not to be questioned. Turns out, there was actually nothing true about this “truism”. But for many years, children sat around, unhappily, awaiting the end of the 30-minute torture.
I only bring this up because there are a few kitchen truisms that I thought we might investigate, just for fun.
1 | Adding Oil to Pasta Water | One of the notions that seems to passionately divide cooks is adding oil to pasta cooking water. The reasons are twofold. It interrupts the foaming of the boiling water, thus preventing the dreaded boil over. And it keeps the pasta from sticking together. The anti-oil in the water crowd maintains that the oil coats the pasta, thus preventing the sauce from clinging to the noodles. The truth lies somewhere in between. My advice: Use whatever method makes you comfortable. I don’t add oil to the water. I prefer to add a bit of fresh oil on top of the finished dish. |
2 | “Cooking Off” the Alcohol | A second divisive notion is the idea that boiling alcohol for a few moments will “cook off all of the alcohol”. This is not true. What will happen is that the raw, unpleasant alcohol taste will disappear. However, only a small percentage of the alcohol itself goes away. In order to rid your dish of a large percentage of the alcohol, you’ll need to simmer(用文火炖)your dish for well over an hour…closer to two. But, unless alcohol is prohibited or dangerous for you, the small amounts called for in most recipes should not be a problem. |
3 | Searing Meat to “Lock In” Moisture | Now, the granddaddy of all kitchen myths: Searing(轻煎)your meat will seal in all of the juices. Again, this is not true. Searing your meat will give it a beautiful colour, and a wonderful flavour coming from the caramelization(焦糖化)of the meat. That said, all of the studies I’ve read agree that the moisture inside the meat will be either the same or even a little less in a seared piece of meat when compared to a non-seared piece. So, enjoy the glorious colour and flavour of your seared steak, but know that the only way to preserve the juiciness is simply NOT to overcook it. And be sure to give it an adequate resting period once it leaves the pan. |

Everyone has many first-time experience and so do I. Now I’d like share with you the first time I tried cooking by myself. One Sunday my parents go out. I felt hungry at the noon, so I decided to cook for myself. I tried to cook some vegetables, so the pot caught fire where I put some oil into it. Lucky, my mother came back and helped me put off the fire. Although my first cooking did not success, I felt proud of myself. It was the start of try something new. Now I’ve become quite a good cook.
9 . How To Make Tasty Yam Pottage(山药汤)?
Below are the methods and ingredients to be used for yam pottage.

1 medium-size Yam
1 ½ spoon, palm oil
2 ½ cups, water
1 bulb, Onion
Blended mix of scotch bonnet pepper, tomatoes, ¼ onion
Groundfish
Smoked mackerel
Seasoning and salt to taste
Vegetable (Ugwu or scent leaf) (Optional)

1.Peel and cut the Yam into chunks size and rinse. Set aside.
2.In a heated pot, add your palm oil, heat for 1minute then add your chopped onions. Fry until slightly brown.
3.Add your blended mixture of scotch bonnet pepper, tomatoes, and onions.
4.While cooking, add your seasoning cube, crayfish, and salt. Stir together. Allow to cook for 10 to 15 minutes.

This recipe is so yummy and easy to make, you can’t go wrong with this recipe. I mean, even if you add too much sugar to the mixture, the lemon will douse it. It is also a very forgiving recipe because no matter how you measure your ingredients, it will always come out just right. It’s the perfect Christmas dessert recipe. This recipe makes two lemon yoghurt cakes.
·Ingredients
2 cups of all-purpose flour
1 tbsp of Vanilla extract
1/2 Cup of Sugar
1 cup of Cooking Oil the Zest of 1 medium to large-sized Lemon
3 to 4 Eggs
A Pinch of Salt
A cup of unsweetened yoghurt
1 tbsp of baking powder

1.Spray your baking pans (I’m using two pans, size: 9 by 5’s) and set aside
2.In a large bowl, scrape the lemon zest from the lemon and add the sugar. Then gently use your fingers to massage the zest with the Sugar.
3.Add the Oil, yoghurt Egg, and Vanilla to the Sugar and Zest then mix till all ingredients are well combined.
4.In a separate smaller bowl combine flour, baking powder, and a pinch of salt.
5.Mix the dry ingredients with the wet ingredients and pour the mixture into the prepared pans.
6.Bake at 350F(华氏350度)in the oven for about an hour
7.After an hour, stick a skewer into the cake to make sure it is ready, then bring it out of the oven and let it sit on a rack to cool down for about 15 minutes.
8.Slice and eat with either ice cream or alone if you like.
