The researchers found that 198 Germans who eat raw food were short of lycopene, the matter found in tomatoes and other red vegetables. “There is an idea that raw foods are always going to be better,” says Steven K. Clinton, a professor at Ohi o State University. “For fruits and vegetables, sometimes a little bit of cooking can be helpful.”
A number of factors decide how the vegetables do good to people’s health before they reach the table, including where and how they were grown and stored before being bought. No single cooking way is best. Some nutrients are easily lost in cooking if they are cooked in different ways.
Vitamins C and B are often lost. In January, another report said that boiling was better for carrots than frying or serving them raw. Frying was the worst way to cook.
What cooked with the vegetables can also be important? When the vegetables were cooked with fat, the diners can get more nutrients. Fat can also make the taste of vegetables better, meaning that people will eat more of them. Putting on some other things that make it taste better—a little salt—can make the food taste better.

Earlier last month, my parents and I had a free day — a rare event for us.

5 . How to Make a Chinese Hot Pot
Eating a Chinese hot pot is a very common experience. People gather around the pot, dipping their food, waiting for it to cook, mixing their own seasonings (调味品) and enjoying each other's company.

6 . Rice is eaten all over the world in all different ways. No matter if your rice is white or brown, it has one thing in common, and that’s arsenic(砷). Now, researchers from the University of Sheffield say a new and simple way of cooking rice can remove this cancer-causing material while keeping the nutrients which make this food so good.
A team from the school’s Institute for Sustainable Food discovered the “parboiling with absorption method” (PBA) can cut down over half the naturally occurring arsenic in brown rice and 74 percent in white rice. More importantly, this homefriendly kitchen method saves the nutrients rice contains.
The PBA method first parboils(将煮到半熟) rice in pre-boiled-water for five minutes. The water is then emptied and fresh water is poured into the pot. From there, the rice is cooked normally at lower heat until the water is all taken in.
The International Agency for Research on Cancer has classed arsenic as a Group carcinogen, the material that can cause cancer. Unfortunately, rice has this water-soluble poison because it grows in flooded fields unlike many other grains(谷物).
Researchers say arsenic can affect every organ in the human body. It can also result in skin lesions, cancer, diabetes, and lung diseases. Rice tends to hold around 10 times more arsenic than other grains. It usually sits in the outer covering of the grain, which makes it more of problem in brown rice. White rice, which is milled(研磨), contains less arsenic but also has fewer nutrients due to the milling process.
“For people who eat rice, this is excellent news. There are concerns amongst the population about eating rice due to arsenic. Previous studies have shown that cooking rice in a lot of water could remove arsenic but the problem is it also removes nutrients,” says lead author Dr. Manoj Menon in a university release. “Our aim was to improve the method to remove arsenic while keeping maximum nutrients in the cooked rice. Our newly developed method, PBA, is easy and homefriendly so that everyone can use it. We don’t know the amount of arsenic in each packet of rice we buy; even though brown rice is nutritionally better than white rice as our data shows, it contains more arsenic than white rice. With our new method we are able to significantly reduce the arsenic while reducing the loss of key nutrients.”

7 . Craziest Food Festivals sounds like a joke topic, but once you start looking into it, you’ll realize they’re everywhere — the crazier, the better.
1. Bibimbap Festival
In the South Korean town of Jeonjuloves, their “mixed rice” dish is a hearty serve of rice topped with raw beef, a rainbow of vegetables, a raw egg and gochujang sauce so much. They take four days out of October to celebrate it.
Like any festival there’s music, entertainment and magic, but making it that little bit different is the bibimbap that’s whipped (搅拌) up in a big bowl by dozens of chefs and served to over 400 people.
2. Waikiki Spam Jam
Who knew this canned meat had so much love? Well, it turns out that a can of Spam is the go-to item in Hawaii, along with a grass skirt and garland (花环). The people of Hawaii love Spam so much that they even spend a day in May giving out the best Spam, a type of cheap canned meat made mainly from pork.
3. Bessieres Easter Egg Festival
At Easter time, for those in the French town of Bessieres it’s all about an egg far less sweet.
Here they celebrate the holiday by getting dozens of chefs to make one large omelette (煎蛋卷) — 15,000 eggs strong — for the townsfolk (市民).
4. Potato Days Festival
This festival actually takes place in Barnesville, Minnesota, the US. Over the last Friday and Saturday in August the town celebrates its potato-growing skills by hosting potato picking and peeling contests, as well as a Miss Tater Tot pageant (盛典) for five- and six-year-old girls.

9 . Daily News — San Francisco chef Cecilia Chiang, who first changed the stereotypes (刻板印象) about Chinese cuisine (菜) in the United States, died Wednesday. She was 100.
Chiang was the owner, chef and mastermind behind the game-changing San Francisco restaurant, the Mandarin. She is widely credited with bringing real Chinese food to America and was a celebrity chef before celebrity (名人) chefs were popularized.
Chiang, who was born near Shanghai, came from an upper-class Chinese family. Although she wasn’t shy about admitting her good fortune, she faced other, perhaps more hard-won obstacles (困难). To convince the dining public that Chinese food didn’t have to be Thursday’s cheap take-out option, Chiang had her work cut out for her, when she moved to the Bay Area in 1959. She insisted on showing diners the refined side of Chinese food and wanted to upgrade the Chinese dining experience. To do this, she also needed to be aware of aesthetics (美学).
The Mandarin did not serve chop suey (炒饭) or chow mien (炒面), two standard dishes on every Chinese restaurant in the US at the time. But this is exactly what Chiang wanted to avoid. In fact, her early encounter (遇见) with Chinese food in America had left her determined to show San Francisco what Chinese food was really like.
“She deliberately and constantly supported outsiders trying to make their mark in food,” her granddaughter, Siena Chiang said. “I hope she is a signal and an inspiration to people with marginalized (边缘化的) identities to always believe in your own worth and knowledge, and not to give into other cultures.”
