Michael Gonsalves, a chef of Golden Oak at Disney World, has a cuisine concept rooted in fresh, locally-sourced ingredients that originated from childhood harvesting produce from their family garden with his mom to eventually leading kitchens at Walt Disney World Resorts to employ a sustainable model.
“Truly the whole process starts with menu planning,” he said. Creating one dish leads into the creation of many more through the end-to-end use of products. As chefs, they are always searching for the best ingredients. It is then their focus to ensure they appreciate and respect all that go into each and every one of them. For example, they source chicken that is naturally grown and fed on a natural plant forward diet, no hormones (激素) or additives — that’s used in many ways throughout menus from a simple grilled chicken breast to bone soup. Nothing goes to waste.
When they do have waste, even if minimal, they shift it from landfills to transform it into compost (堆肥) that’s then used across the Walt Disney World property. They also support Second Harvest, a local community food bank where healthy produce, prepared, but not served, meals eatable for human consumption are donated. Disney also works with pig farmers when they can’t distribute foods past the point of safety for human consumption. Besides, wildlife reservations love to get the meat because tigers and wild cats can still eat that.
Their operations are “on a path to a sustainable zero waste kitchen of tomorrow” where chefs learn the full-life cycle of plants from seed to plate and gain a better understanding and appreciation for the product and their craft.
Golden Oak at Disney has millions of bees that produce up to 300 pounds of honey per year, plus those bees help with cross pollination (授粉) of their gardens on a daily basis. They advocate a culture that helps develop not only the quality of food, but an appreciation for nature.

Everyone should take the action to reduce haze (雾霾), which is harmless to our health. First of all, I believe that if we plant more tree, there will be less haze in their city. Trees can absorb exhaust fumes (尾气) from cars, thus reduce pollution. Second, the government should punish the factories where produce too many fumes. Exhaust fumes is the main cause of haze and do greatly harm to people’s health. Maybe we can move factories to areas where few people live. Third, I think it was a great idea to encourage people to use public transportation. Last but not least, we can call on citizens ride bikes if they make short journeys.
8 . Within the environmental movement, the question often arises whether global warming can be mitigated (缓解) by planting more vegetation. The idea is that the plants will consume carbon dioxide (CO2) that is causing the warming, while producing oxygen for us to breathe. This is acceptable on condition that global warming is indeed caused in some way by CO2 in the air.
However, actual scientific debate on the issue has shifted away from CO2 as the probable cause, especially after the findings that the temperatures changed 800 to 1000 years before carbon dioxide changed. In other words, CO2 levels are an indicator of temperature change, not a cause.
While there is nothing we can do to control the global climate, there is still a lot we can do to improve our local climates. Land use is the biggest decisive factor of local temperature and air quality. On clear days, the temperatures in big cities can be 5.6 degrees Centigrade higher than in the countryside around them. This is because the concrete (混凝土) of sidewalks and buildings and the asphalt (沥青) of roads take in sunlight and transform it into heat. Some get so hot, one could cook an egg on them! These vast surfaces of man﹣made stone also store lots of heat, which they radiate (散发) all night long. Just before sunrise, when the earth should be its coolest, roadways are still warm to touch.
If vegetation was blocking the Sun from the sidewalks and roads, the vegetation would absorb the sunlight, fueling the plants’ oxygen-making engines, and the rock would stay at surrounding temperatures. The easiest and most obvious choice is trees, particularly wide-reaching trees like the oak. Another possibility, especially outside the city centre, could be vine-covered trellises (棚架).Covering rooftops with grasses or other short vegetation reduces a building’s cooling cost as sharply as having trees or trellises that provide shade for windows does.
The reason why vegetation does not warm the air like rock does is that plants take water from the ground and evaporate (蒸发) it through their leaves. The Sun’s energy isn’t radiated as heat — it is used to change water into water vapor. The evaporative cooling works so well that the leaves stay 5.6 to 8.33 degrees Centigrade cooler than they would have been without water. While we can’t improve global climate, increased vegetation can help cool local climates.

9 . More than half of the food produced in Canada goes to waste. A shocking new study has shown that the level of food waste is far worse than previously thought, at 58%. Of that, about 85% of food waste is due to food processors. This differs from earlier studies, which criticized families for driving food waste and said they were responsible for 51% of food waste.
The study was carried out by Martin Hooch, the leading expert on food waste and the author of several previous studies on the subject. Reflecting on the study’s findings, Hooch said, “It means stopping criticizing consumers. Sure, consumers are part of the problem, but they’re not the problem.”
In the past, Hooch didn’t master good data, particularly from the private factories, but relied on numbers collected by the food industry for purposes other than tracking waste. This time, however, Hooch worked directly with companies at all stages along the food production chain and interviewed over 700 experts in the industry. Clearly he found it hard to believe what he was seeing.
This is what they found: Food processing causes 34% of food waste. This is followed by production, which causes 24%. Next is manufacturing at 13%, then hotels and restaurants at 9%. Families cause only 14%, and market sales 6%. This should be a scrious wake-up call for Canadians who would do well to examine their own food supply chains. Food waste is costly, not only in terms of dollars wasted, but also in resources like land, water, and so on. To be using these resources and wasting the product is totally irresponsible and unnecessary.
To make matters worse, when food is thrown into rubbish cans, it produces methane, a greenhouse gas 30 times more powerful than carbon dioxide (CO2). At Canada’s rate of food waste, that’s like adding 12 million cars to the road. It seems that the food industry needs redesigning. Therefore, let’s hope the government takes action.

When I was a child, I hoped to live in the city. I think I would be happy there. Now I am living in a city, but I miss my home in countryside. There the air is clean or the mountains are green.
