The tofu is snow white in color and tastes extremely smooth and tender. When you bite off the pastry outside, the tender and smooth filling inside slips into your mouth.
Here is how to cook it.
1. Rinse (清洗) the tofu. Cut horizontally and then cut into big cubes. Scoop out a hole in each tofu cube.
2. Rinse the dried shrimps in cold water. Soak in hot water for 10 mins and cut finely by scissors.
3. Add all marinade (腌泡汁) into the minced beef, stir well and marinate for 15 mins.
4. Cut out the root of the winter mushrooms. Soak in water for 20 mins. Tear into small bunches. Drain (排干) and set aside.
5. Stuff the marinated meat into the tofu cubes and wrap on heat resistant cling wrap.
6. Steam the tofu:
-using electric steamer: steam at 100℃ for 10 mins.
-on the stovetop: put in wok when the water boils, steam on high heat for 10 mins.
At the same time, heat up the cooking oil in a pan on high heat. Add the garlic, winter mushrooms and seasonings. Then add the water. Cook and stir for about 2 mins. Then add the corn starch mixture at this time. Stir well and turn off heat.
7. When the tofu is done, drain off the accumulated liquid. Put chopped scallion on top and pour the glaze together with the winter mushrooms on top of the tofu and serve. Enjoy!!!

Dear Sir or Madam,
I am writing with regard to the intensive English summer courses that you offer. I would be very grateful if you could send me some detailed information about the course that will be held in your school in Bristol this summer, as well as what kind of accommodation you provide. I would like to enquire about the price of the month course. I would be very interested in finding out more about activities students have in the summer school.
I am 16 years old and I have been learning English in China for nine years now. I would like to improve my written English and speaking skills. Do you have any courses for teenagers which offer a lot of speaking practice in small groups? As I am a student, I would be interested in details of any discounts that are available, and the full price of the course including accommodation. Finally, I would like to ask if I can pay for the course with a credit card and what kind of documents I need to be enrolled.
I look forward to receiving your reply.
Yours faithfully,
Mark

Long walks, the lunchtime run and road trips, things you enjoy together quite safely for the rest of the year, can become dangerous because too much exercise in hot sun or leaving animals in a car, even in the shade, can cause heatstroke (中暑) which can be deadly.
“Heatstroke is a condition where a dog’s temperature rises to the point where damage to internal organs (器官) can occur,” warns Dr. Cindy Bressler. “This is usually seen during the summer months or in warm climates, and is caused primarily because the dog cannot cool itself quickly enough.”
Because of their fur coats, dogs can’t cool via sweating through the skin like humans and they cool themselves by breathing heavily, quickly pulling cool air into the lungs and pushing hot air out. Overweight dogs are more likely to suffer heatstroke. Signs of heatstroke include breathing difficulty, vomiting (呕吐), high body temperatures and a bright red tongue.
“Dogs do not sweat like humans, and without this natural body cool-off response, they are more vulnerable than humans in high temperatures,” says Bressler. “To help prevent heatstroke, you should always have cool water available for your dog and never leave your dog alone in a car, especially in hot weather. Pets who are outdoors should always have access to a shaded area.”
If heatstroke occurs, Bressler advises cooling your pet with cool water, wet towels, fans and cold air.
“Do not cool them too quickly because that can be dangerous,” she adds. “Bring them to the doctor immediately.”
Cats also run the risk of overheating: “With cats,” says Bressler, “it’s important to include water in their diet as they do not seek out water like dogs do. Cats should always have access to fresh and clean water.”

The Indian earned his real name when he was old enough for his first fight against the enemy. His life name depended on how he acted during this first battle. When he returned from the war, the whole tribe would gather and observe the ceremony in which he would be given his name by the chief. If he had done well, he would get a good name.Otherwise he might be called Crazy Wolf or Man-Afraid-Of-a-Horse.So an Indian’s name told his record or described the kind of man he was.
A man was given many chances to improve his name, however. If in a later battle he was brave in fighting against the enemy, he was given a better name. Some of our great fighters had as many as twelve names—all good and each better than the last.
An Indian’s names belonged to him for the rest of his life.No one else could use them.Even he himself could not give them away because names were assigned by the tribe, not the family. So no man could pass on his name unless the chief and the tribe asked him to do so.
Sometimes an Indian would be asked to give his name to a son who had performed a noticeable deed.I know of only three of four times when this happened. It is the rarest honor for a person—the honor of assuming(承担) his father’s name.
1. An Indian could be given the second name by__________.
A.his father | B.the enemy |
C.the chief of the tribe | D.his childhood friends |
A.a victory in his first battle against the enemy |
B.a name given by the chief |

A.many people in the tribe liked him | B.he was a great fighter |
C.he had a lot of friends | D.he had fought in fewer than ten battles |
A.The names given by the playmates of an Indian were usually not pleasant |
B.The life name of an Indian was earned in battle |
C.An Indian could throw away his birth name when he was old enough to earn one for himself. |
