2 . Fresh fish should have a mild smell. Strong fishy smells are the first signs to go bad. How do the fishy smells come from?

It can be several days from when the fish are caught to when they reach the supermarket. In that time, bacteria that grow naturally in fish start to consume a substance called trimethylamine N-oxide(TMAO)in fish. These bacteria change TMAO into trimethylamine (TMA), the substance responsible for the fishy smells. Bacteria in fish can also change lysine(赖氨酸)into cadaverine(尸胺), a substance that’s associated with breaking down the fish once they are caught and giving off fishy smell.

Chemical reactions can also lead to fishy smells. This happens through the oxidation(氧化)of fat. Fish are an important source of omega-3 fatty acids. When these fats are exposed to oxygen, they oxidize and break down into the substance that you can smell.

To slow down the fishy smell, what is beyond question is that the less time between when the fish are caught and when they reach the kitchen, the better. But today, fish are often flown across the globe. To keep smell-producing bacteria at bay, the fish must be frozen or kept at the low temperature possible as soon as they are caught and cleaned.

Controlling fat oxidation can function as well, especially for fattier fish species. While freezing slows bacterial growth, it does not stop fat oxidation. This reaction will occur as long as oxygen is present. Fatty fish are usually not frozen because, despite the cold temperature, they’re going to oxidize pretty fast unless they are stored in a low oxygen container. That’s why those species are often canned.

It’s also important to remember that smell is not always an indicator of safety, especially in processed fish products. “What you might consider the fishy smell may be a delicacy in another culture,” said Carl A. Batt, a professor of food science at Cornell University.

I became so dissatisfied that I began missing practices, which disappointed my kind teammates and teacher. They had no choice but to continue their training schedule.

The day of the finals dawned bright and fine. Actually, I just passed my teammates to enter the hall of the debate finals, feeling the excitement of being able to finally show off my debating power. But the reality was something quite different. My absence from the practices had created a gap between my teammates and me. We could not work perfectly as we did previously. Instead, our teamwork was so bad that even our school supporters were shamed into silence. When it was my turn to conclude as the last speaker of the team, the hall was quiet. Everyone knew that I was the most likely to win the overall best speaker for the series.

7 . As the world seeks to slow the pace of climate change and preserve wildlife, trees undoubtedly hold a major part of the answer. Yet the mass destruction of trees--deforestation-continues, sacrificing （牺牲）the long-term benefits of standing trees for short-term gain.

    1    Since humans started cutting down forests, 46 percent of trees have been logged. About 17 percent of the Amazonian rainforest has been destroyed over the past 50 years, and losses recently have been on the rise.

So, what are the factors leading to deforestation? Farming, animal raising, mining, and drilling combined account for more than half of all deforestation.    2    Plus logging operations, which provide the world^? s wood and paper products, cut down countless trees each year. Some loggers acting illegally even build roads to access more and more remote forests--which leads to further deforestation.

    3    Some 250 million people living in forests depend on them for survival and income—many of them among the world's rural poor. Eighty percent of Earth's land animals live in forests and deforestation threatens many species.    4    The South American rainforest, for example, influences regional and perhaps even global water cycles, which is key to the water supply in Brazilian cities and neighboring countries.

Luckily, a movement is under way to preserve existing forest ecosystems and restore lost tree cover. Organizations and activists are working to fight illegal mining and logging. As consumers, it makes sense to look for sustainably produced sources.     5
