Yoghurt

It was a rough week. The price of oil skyrocketed as the temperature dropped sharply in Maine. We were looking at a high of eight degrees that week, and I had missed three days of work so my paycheck was going to be lower than normal. I was stressed, to say the least. I shopped strategically, looking for every possible way to cut pennies so I could buy groceries and keep the house warm.

My eight-year-old son didn't understand when I told him we were struggling that week. He wanted a special kind of yoghurt, but I didn't have the extra three dollars to buy it for him. It was the kind of yoghurt with a cartoon kid riding a skateboard on the front of the box, and a mere two spoonfuls in each cup. It was the kind of product that wastes a parent's money and makes me hate advertising.

I felt guilty as a parent when those big eyes looked at me with confusion, as if to say, “It's just yoghurt. What's the big deal?” So I found a way. I put something back as single mothers often do. He got his yoghurt.

On the way driving back from the grocery store, I noticed a homeless man holding a sign by the side of the road. My heart hurt, and I tried not to look at him. I watched people stay away from him on the street and walk by without even meeting his eyes. My son didn't seem to care much, either. I looked at the man closely then — bare hands grasping a piece of cardboard, snot frozen to his face, a worn-out jacket. And there I was struggling because I had to buy oil and groceries. But I decided to help. I pulled over to the man and handed him a five-dollar bill.

3 . One thing that has always attracted us is the food taboos (禁忌). There is one that seems to be acknowledged in the West: the idea that seedless (无籽) fruits are dangerous.

For those unfamiliar with this belief, it seems to go like this. The basic function of fruit in nature is to spread the seeds of the plant to ensure the survival of the species. When fruits are seedless, however, it is meant to be a sign that they want to give up their basic function. According to more extreme views, these fruits not only have fewer vitamins and minerals, but also are actually harmful to humans.

In fact, from the view of science, seedless fruits are the result of a biological development. While it is true that this development can be the result of human actions, it also happens in nature all the time. Often, it is a combination of both.

What effect does the absence of seeds have on nutrition (营养)? Well, seeds do often contain nutrients like fibre, which can mean seed-containing fruits are a little bit higher in fibre. They can also contain potentially beneficial nutrients. This, however, will make a difference only when you eat up the seeds, bite them with your teeth and break the seeds in a digestible form.

Then there is the question of popularity. It doesn't matter how nutrient-packed a crop is if people are unwilling to eat it. While the nutritional difference between seeded and seedless is very small, we know that the sale of seedless fruits has greatly increased since seedless forms were introduced to the market. So when seen in this wider viewpoint, rather than being a loss for nutrition in our diets, seedless fruits have been a gain for us human beings.

4 . Paris is the city of dreams. If you plan to head for Paris for a study period, perhaps a little reality check is in order. But my experience was a romantic one.

I paved my path to Paris through an exchange program. On arrival in Paris, I was constantly reminded of the official processes I had to complete—forms to fill in, meetings to attend—the list seemed endless.

Then the real work began. Once classes were underway, I found myself volunteering to do oral presentations and assignments first rather than last. This method proved to be very helpful.

Maybe you can read books about Paris and talk to locals and other foreigners living there. But the one thing that reading a book or talking to someone cannot do is provide you with the experience of wandering Paris on foot. The people watching, the sounds of the city, and the colors as the seasons change, they all add to the ecstasy that I experienced in Paris as an exchange student.

After spending five months wandering through the charming neighborhoods, I fell in love with the atmosphere that came out from every open door and every spoken word. There is something comforting about walking to the market each Sunday to enjoy the beautiful display of fruits, vegetables and dairy products. There is warmth in saying Bonjour to the passers­by.

On my last day in Paris, I confidently said “Bonjour Monsieur” as I passed the little store down the street. I guess the best part about going on exchange in Paris is falling in love with the city in your own way. And I know mine is unique and special to me—my own little pieces of Paris.

7 . Processed foods like chips, sodas and frozen pizzas are full of salt, sugar, and fat. Now, scientists are trying to understand if there is something else about such foods that may be bad for humans.

Scientists have already linked low-cost, packaged foods to rising obesity rates around the world. Obesity increases the risk of many health problems. Three recent studies offer more clues on how our increasingly industrialized food supply may be affecting our health.

The researchers created a system that places foods into four groups. The system says highly processed foods are made mostly of industrialized materials and additives(添加剂). Sodas, packaged cookies, instant noodles and chicken nuggets(鸡肉块) are some examples of highly processed foods. But also included are products that can seem healthy, such as morning cereals, energy bars and some kinds of yogurt.

Researchers conducted a four-week study involving 20 people. They found that people ate about 500 more calories a day when fed mostly processed foods. That is compared to when the same people were given less processed foods. The researchers permitted the 20 participants to eat as much or as little as they wanted. They were taken to a medical center so their health and behavior could be observed. In another study, researchers in France found people who ate more processed foods were more likely to have heart disease. A similar study in Spain linked eating more processed foods to a higher risk of death in general.

When fed less processed foods, people in the study produced more of a hormone that controls hunger, and less of a hormone that causes hunger. The reason for the reaction is not clear. The scientists also found that people ate processed foods more quickly. Kevin Hall is one of the researchers who led the study. He said that processed foods were usually softer and easier to chew and swallow”. Hall noted the source of nutrients might make a difference. For example, fiber from fruit and vegetables may be better for making people feel full than fiber added to packaged foods such as energy bars and yogurt.

Avoiding processed foods can be hard, especially for people with limited time and money. Processed foods can also take many forms. In addition, companies continually re-engineer products to make them seem healthier. The newest studies may provide more reasons to avoid processed foods. But, they also call attention to the difficulty of coming up with ways to do that.
