“An apple a day keeps the doctor away.” Similarly, if we drink a little more water every day, we may find that we need to go to the doctor a lot less often. A healthy diet is made up of water and a great many different kinds of foods. We know that healthy foods like fruits, vegetables and fish, are important as they provide us with energy and fiber, without giving us too much fat and sugar. But why is water important?
The human body needs water to survive. Water is important as it carries poisons and waste out of our bodies. However, doctors advise us to drink plenty of water, much more than the small amount we need to stay alive.
Some doctors believe that water is important for our health in all kinds of ways. They believe that a great many illnesses and health problems start as a result of dehydration (脱水)-—a lack of water in the body. Most people are dehydrated at least some of time, although they probably don’t know it. It is surprising to learn that if we feel thirsty, we are already in the first stage of dehydration. In fact, we are advised to drink water before we feel thirsty.
These doctors think that health problems such as headaches, high blood pressure and asthma (哮喘) could be helped if people drink more water. They also believe that drinking more water can help people who are overweight. Water contains no calories so it will not make us put on weight. If we drink water, we will probably drink less sugary soft drinks such as Coca-cola. Doctors also believe that drinking more water may stop people from overeating. They say that many people think that they are hungry when they are, in fact, thirsty. Doctors suggest, therefore, that we eat less food and drink more water. There are still many health problems that cannot be solved by drinking water, so we should not stop going to seeing the doctor completely. However, if we make a decision to drink water every day, we may find that we need to go to the doctor a lot less often.

Teff has been an important part of the Ethiopian diet for thousands of years. Like rice and wheat, it is a cereal grass. Teff is known for its fine grain and used mainly to make flour. Teff flour is the key ingredient in injera, the large, spongy pancakes that make up a large portion of the Ethiopian diet.
Teff was introduced to the United States by a man named Wayne Carlson, who learned about teff while doing public health work in Africa in the mid-1970s. "I came to know teff because I was eating it all the time and hosted by teff farmers. " he said. In the late 70s, Carlson returned to the U. S. , married and settled in southwest Idaho. Then he came up with an idea to introduce teff grass to his home state. " Geologically, it is very similar to Ethiopia."
Wayne and his wife Elisabeth are not farmers, nor do they want to be. So they convinced actual farmers in Idaho to grow teff on contract for them. The Carlsons milled it themselves.
Wayne went through the Washington, D. C. telephone book and looked for the names that were Ethiopian. And that is how the business slowly grew. Over time, the Teff Company has outgrown four different mills.
Rich Roseberg is a food researcher at Oregon State University. He says teff production has exploded over the past decade in the U. S. He says most teff grown in the U. S. is fed to farm animals. In Idaho, however, where the Carlsons are based, Roseberg believes more of the teff production is for human food. Teff contains lots of calcium, iron, protein and fiber. Roseberg credits Wayne Carlson for being ahead of his time.

◆ Bananas
Bananas should never be placed inside the refrigerator because they keep nutrients better outside the fridge. Bananas are better kept on the counter until they ripen. The cold temperatures actually slow down the ripening process of the bananas, while the wetness and darkness of the fridge will only lead to rotting.
◆Potatoes
Potatoes should be placed in a cool, dry and dark space. The cold temperature of the fridge can turn starch (淀粉) into sugar more rapidly. It is also recommended that potatoes be removed from plastic or paper bags they may have been placed in. Also, keep them unwashed, as well in an uncovered cardboard box.
◆Garlic(大蒜)
Placing garlic in your refrigerator will actually cause it to shoot. The garlic will also rotten and even rubbery. Moreover, inside your fridge, the look of the garlic will rarely change. This means you won’t be able to tell if it’s any good until you finally slice it open.
◆Onions(洋葱)
Placing your onions inside your refrigerator will eventually end up turning them rotten and soft. Unpeeled onions should be kept out of plastic bags and fridge. One of the reasons for this is because unpeeled onions require and need air exposure for maximum life. If you have peeled (剥皮) an onion though, then you should keep it in the fridge, in a covered container.

My ten-year-old son Zack is very aware of his body and how food affects him. This past summer Zack was invited to a camping trip. He left on Friday and came home on Sunday morning. On Saturday night, Zack ate a lot of food...and junk food...and who knows what else. He went to bed at 11:00 p.m. and at around 1:30 a.m. Zack threw up in the tent. It was his body telling him that it didn’t like what he ate that day.
Recently, Zack and I were asked to speak to an audience of more than 200. I spoke about Unjunk Your Junk Food and Zack spoke about his appreciation of our book and how it has impacted his life as a ten-year-old child.
I asked Zack to write his own speech because I wanted what he said to come straight from his heart.
Here’s his speech:
“Today I’m going to talk to you about my mom’s book, Unjunk Your Junk Food. It’s a great book, but I’m a little disappointed that my favorite type of candy is in it, Twizzlers. I realized that it’s bad after reading the book, so I don’t eat it anymore.
I saw the movie Super Size Me and I realized that junk food, especially fast food, is really unhealthy, and I won’t ever go to McDonald’s.
I brought my mom’s book to school, and my mom even gave presentations to many classes, including mine. Well you guys can do the same thing and show people the book at your work and schools, and give them tips on eating healthy food.
Thanks for listening.”
While not all children have as much reaction to junk food as Zack, it’s clear that the human body doesn’t work as its prime(全盛时期) when we give it this type of food. It’s important to me that my children eat a healthy diet and limit their exposure to the food that isn’t good for them, and the best way for them to do that is for me to teach them about making healthy choices. While I fill my home with healthy options, it’s wonderful to see my son now come to realize, on his own, that the choices he makes affect the way he feels.
