“I think it’s unfair to just classify Chinese cooking as one,” says Kian Lam Kho, an organizer of “Sour, Sweet, Bitter, Spicy: Stories of Chinese Food and Identity in America” at the Museum of Chinese in America. “Even with the same dish or same cuisine, every family has a different variation.” That’s why the organizers say if you want to taste the full range of Chinese cuisine in the US, you’ll need to go beyond restaurants and into home kitchens, which can play a central role in many immigrants’ lives.

“The kitchen itself is kind of a comfort when you come to a new country. That’s the one place where you set up as your home base, and you cook things that you remember from your past,” explains Audra Ang, another organizer.

One of the home cooks showcased in the exhibition is Ni Biying, 80, of Manhattan. She worked as a live-in babysitter for years before she could finally afford to rent a home with her own kitchen. These days, you can usually find her moving around her one-bedroom apartment as a sweet smell of vinegar and rice wine floats from her stove. For Ni, a small dinner for friends and family means preparing almost a dozen different dishes. She learned some of her techniques from her father, who made most of her family’s meals when she was a child. “I still miss the beef with stir-fried celery my father used to cook,” she says. And it’s the kind of comfort food that defines Chinese food for Ni.

4 . An 85-year-old primary school constructed in 1935 in Shanghai has been lifted off the ground completely and relocated using new technology called the “walking machine”. The project marks the first time this “walking machine” method has been used in Shanghai to relocate a historic building.

Urbanization (都市化) has continued to significantly threaten architectural heritage. In the capital Beijing, for instance, more than 1,000 acres of its historic hutongs and traditional courtyard homes were destroyed between 1990 and 2010.

In the early 2000s, due to the critics’ protest against the loss of old neighborhoods, cities including Nanjing and Beijing drew up long-term plans to preserve what was left of their historic sites, with protections introduced to safeguard buildings and set limits to developers. These protection efforts have taken different forms. In Beijing, a near-ruined building was transformed into a restaurant and gallery, while in Nanjing, a cinema from the 1930s was restored to its original form, with some parts of it changed for modern use. In 2019, Shanghai welcomed Tank Shanghai, an arts center built in renovated (重修) oil tanks.

“Relocation is not the first choice, but better than destroying them,” said Lan, the Shanghai primary school’s project supervisor. He also added, “Building relocation is a workable option. The central government is putting more emphasis on the protection of historic buildings. I’m happy to see that progress in recent years.”

Shanghai has been generally acknowledged as China’s most active city when it comes to heritage preservation. The survival of a number of 1930s buildings and 19th-century stone gatehouses has offered distinct examples of how to give old buildings new life.

“We have to preserve the historic building no matter what,” Lan said. “The relocation has challenges, but in general, it is cheaper than destroying and then rebuilding something in a new location.”

6 . There’s a significant reason behind the four standard colors found on passports, but there are some unusual shades, too. Take a closer look at that small, rectangular booklet in your hand. Depending on where you’re from, its color could tell you a lot about the country you call home.

“Although there are no strict international guidelines for passport colors, the shades are by no means random. Countries typically choose colors that can best show their culture, politics, or faith.” Claire Burrows of De La Rue, a British passport-making company, told the Economist.

For example, Islamic countries often use green passport covers because the color is important in their religion. Member countries of ECOWAS(the Economic Community of West African States) cover their passports with various shades of green, too. Members of the European Union, on the other hand, use burgundy-colored passports, as do countries who would like to join the EU, such as Turkey.

The United States tends to march to the beat of its own drum, and its passport’s color is no different. While the country shifted between pale brown, green, and a variety of reds into the latter half of the 20th century, it finally settled on blue in 1976. As for the shade? It matches the blue on the American flag, according to the Economist. Citizens of many Caribbean and South American countries, including Brazil, Argentina, and Uruguay, also carry blue passports.

But why all of the dark shades? According to Bill Waldron of Holliston, a Tennessee-based passport-printing firm, darker colors are preferred because they can hide dirt, provide a nice contrast with the country crest, and appear more official.
