Growing up in San Francisco, Grace Young used to watch her father shop daily in Chinatown for whatever he needed to make traditional Chinese meals at home. As an award-winning cookbook author, Ms. Young, now 66, has spent decades shopping the same way in New York’s Chinatown.
Ms. Young developed a passion for cooking at an early age. At 13, she started to sit in on cooking classes. After college, Ms. Young moved to New York and worked in a book-packaging company. In her 30s, she realized that while she had helped create more than 40 cookbooks, she didn’t know how to make the dishes that tasted of home. “I knew if I recorded all of my parents’ recipes, it would be a great gift that I could give my family and the next generation.” she says.
Yet what began as a recipe book became a kind of memoir. Talking about food encouraged her parents to finally open up about their past, like the fact that her father had owned a Chinatown restaurant in the 1940s. “It was really an amazing way to learn not only my family’s recipes, but also my family’s story. “she says. The Wisdom of the Chinese Kitchen (1999) launched Ms. Young’s work in preserving and sustaining Chinese culinary (烹饪的)traditions.
Ms. Young has also devoted herself to supporting the restaurants in Chinatown. Since early 2020, Ms. Young has raised money to buy meals from Chinatown restaurants and deliver them to those in need. This year, instead of cooking at home for her husband and friends, she celebrated the Chinese New Year with various dishes from local restaurants in Chinatown. “If these restaurants don’t survive, Chinese culinary traditions in our city won’t survive.” she says.

3 . Grieve Her Mum Through Cooking
Grief and mourning can be expressed in many ways.
Along with the love of food and family, her mother, and her grandmother before her, had passed down a carved wooden spoon. It was given from one to the next.
After her mother’s death, Debbie also found the planner containing these detailed dinner party plans and recipes. Her mother was not gone.

4 . It was just after 17:00 on a mid-September evening at a historical Church in Harlem, New York City. Mostly the low-income black neighborhood sat at dining tables. In front of them was a menu listing three courses, which they only saw on TV. Each dish was prepared with “leftover” ingredients(食材), offered free of charge and placed alongside a blue card that read “you are loved” in hand-written script.
This-is-one of 14 community centers created around the world in cities like Milan, Paris, Mérida, Lima, Sydney and now New York through three-Michelin starred chef Massimo Bottura’s Food for Soul project. He started the project in 2016 with his wife, Lara Gilmore, to help fight the global problem of food waste-by using ingredients that might otherwise be thrown away by suppliers and to give socially and economically vulnerable people access to high quality meals.
Partnering with architects, artists and community leaders, the project is transforming spaces, which are not fully taken advantage of, such as churches and even a historical home into intentionally designed cultural centers equipped with kitchens, dining rooms and other facilities that help create a sense of well-being, connection and inclusion.
When I asked Bottura why he created such thoughtful. meals within beautifully appointed spaces for the low-income, he told me that everyone deserves respect and beauty-and of course, healthy food. “They come in and are completely lost because they’re not used to coming into beautiful places, like this. But once they’re here, they realize that this place is their place. It’s not my place,” he said.
Bottura’s philosophy is one that comes from the heart. T-shirts worm by volunteers at his community centers say “cooking is an act of love”, and he approaches the food served there with as much care as he does at his restaurants — “probably even more”, he said since the diners are extremely stressed and need healthy food to feel better. Bottura insists that it’s important to change the language around the food served in his community centers.

5 . With low or no-carbohydrate diets rising in popularity in recent times, the potato is now regularly overlooked in favour of other vegetables. In fact, research literature has previously indicated potatoes may have a detrimental effect on health, such as increasing the possibility of developing Type2 diabetes(糖尿病).
However, new research done by Edith Cowan University (ECU) has shown while potatoes may not have all the same benefits as some other vegetables, such as lowering risk of Type 2 diabetes, health issues associated with potatoes may actually be due to how people are preparing them and what they’re eating them with.
A recent analysis of this study led by Dr Nicola Bondonno from ECU’s Nutrition and Health Innovation Research Institute found people who consumed the most vegetables were 21 percent less likely to develop Type 2 diabetes than those who consumed the least amount of vegetables. PhD candidate Pratik Pokharel carried out work on the analysis and said while potatoes didn’t have the same impact on Type 2 diabetes, they also didn’t have any negative effect.
“In Denmark, people consume potatoes prepared in many different ways. In our study, we could distinguish between the different preparation methods. When we separated boiled potatoes from mashed potatoes(土豆泥), fries or crisps, boiled potatoes were no longer associated with a higher risk of diabetes: They had a zero effect,” said Pokharel.
“In our study, people who ate the most potatoes also consumed more butter, red meat and soft drinks-foods known to increase your risk of Type 2 diabetes,” said Pokharel. “We should separate potatoes from other vegetables in regard to messaging about disease prevention but replacing refined grains such as white rice and pasta(意大利面食)with potatoes can improve your diet quality because of fibre and other nutrients found in potatoes.”

6 . Cheesy Pizza Stuffing
Yield: 4 to 6 servings
Time: 45 minutes, plus drying bread
Ingredients:
• 1 (12-to 14-ounce) loaf brioche (黄油面包), torn into bite-size pieces (about 4 cups)
• 4 tablespoons unsalted butter, plus more softened butter
• 1 large yellow onion
• Salt and black pepper and 2 tablespoons tomato sauce
• 1 large egg and 1 cup whole milk
• 2 cups shredded low-moisture mozzarella (马苏里拉奶酪)
Directions:
The night before serving, spread the bread pieces on a sheet pan and let sit on the counter to dry out. Alternatively, you can bake them at 250 degrees until completely dried out and no longer soft, 20 to 30 minutes.
When ready to make the stuffing, transfer the bread to a large bowl. Heat oven to 350 degrees and grease a 9-by-13-inch or 8-by-11-inch baking dish with softened butter. Melt the 4 tablespoons butter in a large skillet over medium-high and add the thinly sliced onion. Season with salt and pepper, and cook, stirring occasionally, until slightly browned at the edges, 5 to 7 minutes. Stir in the tomato sauce and cook until fragrant, about I minute.
In a medium bowl, beat the egg with a fork, then beat in the milk. Pour the milk mixture over the bread and toss with two spoons until evenly coated. Add 1 cup mozzarella and toss again until well combined. Let sit until the bread fully absorbs the liquid, about 5 minutes.
Transfer the stuffing and any accumulated liquid to the greased baking dish, spread out evenly and top with the remaining 1 cup mozzarella. (To make ahead, you can stop at this stage, cover the dish and refrigerate for up to 24 hours.)
Bake, uncovered, until heated through and the cheese is melted, 15 to 25 minutes. (You may need to add a few minutes to the bake time if the stuffing has been refrigerated.)
