Vitamins C and B are often lost. In January, another report said that boiling was better for carrots than frying or serving them raw. Frying was the worst way to cook.

What cooked with the vegetables can also be important? When the vegetables were cooked with fat, the diners can get more nutrients. Fat can also make the taste of vegetables better, meaning that people will eat more of them. Putting on some other things that make it taste better—a little salt—can make the food taste better.

6 . It was a gloriously sunny day in Switzerland and we were driving over the Alps. Our daughter was singing in the back; she was happy to have just passed her latest exams. We’d just survived a trip, going down a mountain.

In the Alps, whichever way you go, you’re traveling on tiny mountain roads with lots of switchbacks . And as soon as we reached the first hairpin, we realized there was something seriously wrong with our brakes. They didn’t work.

Coming into the bend, the only way my husband could slow us down was by using the handbrake. The problem with mountain roads is that there are very few places to turn around or pull to the side of the road safely. And we’d just left a car park, which meant there wouldn’t be another parking area for a while.

All we could do was continue down the mountain, in our heavy motorhome which was gaining speed, trying hard to slow without working brakes. There were 180-degree bends every 200 meters or so — and each one was completely terrifying.

We didn’t know if or when the handbrake would give out, and then we would be in big trouble — there aren’t any barriers to stop you going over the edge on these roads.

I’m grateful my husband was driving and that he was able to deal with it. Yes, our handbrake was ruined. No, we didn’t care. At the bottom of the mountain, we were lucky to find a small town with a garage. There, we quickly discovered the cause — our brake liquid had totally disappeared!

When we bought the motorhome three months earlier, we’d been assured it had just received a full service and a vehicle test. We did our own checks, too, but we never thought to check the brake liquid.

It turned out that it hadn’t been changed for years and was mostly water — which meant it had changed into gas over the past 48 hours as the brakes got hot going up and down the mountain until it was gone. Thankfully, the garage was able to replace it and they also changed the handbrake for us.

Balance

10 . Though there are filters which can change digital photographs to make them similar to a painting, obvious differences still exist.

A brand-new painting AI has been made public recently. Much like the pupils of the old masters, the new AI studies the work of great painters like Vermeer and Van Gogh and learns to reproduce their works.

The AI, named “PaintBot”, is the creation of a team of researchers from the University of Maryland, the Bytedance AI Lab and Adobe Research.

PaintBot can not only reproduce the work of different artists but create new works based on photographs in the chosen painter's characteristic style.

To train the AI to imitate a given artist's technique, the researchers would present it with between 3 and 10 reference paintings. With each reference painting it studies, the AI gradually learns to recognize the various characteristics of the given artist's technique, including the stroke colour, position and size—along with the order in which each brushstroke should be made.

PaintBot uses a technique known as reinforcement learning. During the learning process, the AI would practice reproducing reference paintings, which it would then compare with the original work to see how similar the two were and if it was improving its imitation of the artist's style. It takes around six hours for the AI to learn to imitate a given painter.

Once the AI has mastered a particular artist's technique, the researchers could present it with a new image to reproduce in the same style. The AI then uses what it has learnt to produce a new painting, putting down each brushstroke one at a time.

After being trained in a given style, PaintBot takes only around five minutes to produce each of its digital masterpieces.

The way that PaintBot's compositions are built up from thousands of individual brushstrokes makes the AI's works more realistic than those online filters.
