2 . I love cooking. Food has always been a love language in my family, and I seem to speak it well-both in consumption and preparation.

The traditional method for cooking a lobster (龙虾) — boiling it alive — raises the question of whether or not lobsters feel pain.     1    . Lobsters go bad very quickly after they die, and eating a dead lobster increases the risk of illness and reduces the quality of its flavor. However, if lobsters are capable of feeling pain, the method and others, such as storing the live lobster on ice, raise moral questions for chefs and lobster eaters alike.

    2    . Lobsters have a peripheral system like humans, but instead of a single brain, they possess nerve cluster (神经簇). Because of this difference, some researchers argue lobsters are too dissimilar to vertebrates (脊椎动物) to feel pain. Nonetheless, lobsters do satisfy all of the standard for a pain response. Lobsters guard their injuries, learn to avoid dangerous situations, respond to anesthetics, and are believed to possess some level of consciousness. So most scientists believe that injuring a lobster causes physical pain.

    3    , so it is now becoming illegal to boil lobsters alive or keep them on ice. Currently, boiling lobsters alive is illegal in Switzerland, New Zealand, and the Italian city Reggio Emilia.

The most humane tool for cooking a lobster is the CrustaStun. This device electrocutes a lobster, making it unconscious in less than half a second or killing it in 5 to 10 seconds.     4    .

Unfortunately, the CrustaStun is too expensive for most restaurants and people to afford. Some restaurants place a lobster in a plastic bag and place it in the freezer for a couple of hours, during which time it loses consciousness and dies.     5    , but it is probably the most humane option for killing a lobster before cooking and eating it.

Charcoal vs Gas

The first decision is how your BBQ is going to be powered. There are essentially two main choices: the traditional way with charcoal, or the quick and convenient way with gas. For those who get frustrated with the process of lighting coals and waiting for them to reach the desired temperature, then gas is the easy option. It’s clean and gets up to temperature in an instant. But for many, the main fun of a barbecue lies in the back-to-basics cooking that hot coal brings natural barbecue fire. You’ll also find a far greater range of charcoal barbecues.

Size

For anyone who likes to throw a garden party with a busy barbecue at the centre of the action, there are some vast grills (烤架) available. But unless you’re regularly feeding the masses, then these BBQ beasts can be impractical. Smaller meals are better suited to smaller equipment, so be realistic about the size that best suits you.

Open grill or lid

While facing the barbecue selection of your nearest retailer, you’ll notice that some of them have lids. These will usually be round and will make you pay more than the lidless options. But if you want the benefit of being able to cook larger items over a longer period of time, such as a whole chicken, then a lid will be essential.

Every day, I cooked delicious food to keep everyone’s spirits high. But, secretly, I hoped that cooking some dishes that we had made together in my childhood would somehow help get Gran’s memory of me back, if not just for a moment.

Stews (炖菜), chops (排骨), roasts—I served all of these to Gran and my parents around the clock. However, new research done by Edith Cowan University (ECU) has shown while potatoes may not have all the same benefits as some other vegetables, such as lowering risk of Type 2 diabetes, health issues associated with potatoes may actually be due to how people are preparing them and what they’re eating them with.

A recent analysis of this study led by Dr Nicola Bondonno from ECU’s Nutrition and Health Innovation Research Institute found people who consumed the most vegetables were 21 percent less likely to develop Type 2 diabetes than those who consumed the least amount of vegetables. PhD candidate Pratik Pokharel carried out work on the analysis and said while potatoes didn’t have the same impact on Type 2 diabetes, they also didn’t have any negative effect.

“In Denmark, people consume potatoes prepared in many different ways. In our study, we could distinguish between the different preparation methods. When we separated boiled potatoes from mashed potatoes(土豆泥), fries or crisps, boiled potatoes were no longer associated with a higher risk of diabetes: They had a zero effect,” said Pokharel.

“In our study, people who ate the most potatoes also consumed more butter, red meat and soft drinks-foods known to increase your risk of Type 2 diabetes,” said Pokharel. “We should separate potatoes from other vegetables in regard to messaging about disease prevention but replacing refined grains such as white rice and pasta(意大利面食)with potatoes can improve your diet quality because of fibre and other nutrients found in potatoes.”
