2 . How to Make a Chinese Hot Pot

Eating a Chinese hot pot is a very common experience. People gather around the pot, dipping their food, waiting for it to cook, mixing their own seasonings (调味品) and enjoying each other's company.     1

Firstly, prepare a large pot of soup. There is no right or wrong way to prepare a soup, so feel free to make your own. A simple soup can be made by boiling water with the addition of meat bones or fish heads and a mixture of herbs, seasonings and vegetables.

Then, cut a variety of meats and fish into thin slices.    2    . Choose any food that you enjoy. Some common choices for Chinese hot pot include thin pieces of beef, pork, lamb and so on. You can make your hot pot using the more traditional method of using the meats and seafood that are local to you. Meanwhile, select, wash and prepare some vegetables.     3     Mushrooms of all kinds are also common to Chinese hot pot preparations.

4    At home, a single hot pot would work well up to 4-8 people depending on the size of the pot. Make sure everyone is sitting in a circle and has easy access to everything on the table. Prepare a separate small dish for each guest to mix their seasonings.     5    !

A.Finally, arrange the seating reasonably

文章大意:本文是一篇应用文。文章主要介绍了选购烧烤架的具体方法。

3 . If you’re feeling in the mood for grilled food but don’t have a barbecue, then deciding what product to purchase can be a bit difficult. So to help you get a better understanding of just some of the choices available, here’s our guide to buying a new BBQ.

Charcoal vs Gas

The first decision is how your BBQ is going to be powered. There are essentially two main choices: the traditional way with charcoal, or the quick and convenient way with gas. For those who get frustrated with the process of lighting coals and waiting for them to reach the desired temperature, then gas is the easy option. It’s clean and gets up to temperature in an instant. But for many, the main fun of a barbecue lies in the back-to-basics cooking that hot coal brings natural barbecue fire. You’ll also find a far greater range of charcoal barbecues.

Size

For anyone who likes to throw a garden party with a busy barbecue at the centre of the action, there are some vast grills (烤架) available. But unless you’re regularly feeding the masses, then these BBQ beasts can be impractical. Smaller meals are better suited to smaller equipment, so be realistic about the size that best suits you.

Open grill or lid

While facing the barbecue selection of your nearest retailer, you’ll notice that some of them have lids. These will usually be round and will make you pay more than the lidless options. But if you want the benefit of being able to cook larger items over a longer period of time, such as a whole chicken, then a lid will be essential.

1. Which BBQ is suitable for Jack, who likes back-to-basics cooking and often invites friends to the garden party?
A.Gas barbecue in small size.B.Gas barbecue in big size.
C.Charcoal barbecue with big grills.D.Charcoal barbecue with small grills.
2. What is the difference between the open grill and the one with a lid?
A.The open grill costs more.B.The open grill looks superior.
C.The open grill is more reliable.D.The open grill is less suitable for larger items.
3. Which column of the magazine is the passage most likely selected from?
A.Lifestyle.B.Business.C.Culture.D.Sports.

The Birthday Cake

Josie was a girl who loved to bake. She always helped her uncle at his bakery. Mostly she carried ingredients from the refrigerator to the large work table. Sometimes Uncle Dave let Josie stir (搅拌) the cake batter (面糊) with a wooden spoon.

Josie wanted to learn to bake a cake on her own. She asked if Uncle Dave would show her how Her mother’s birthday was only two days away. If Josie made a cake all by herself, it would be a wonderful surprise.

On Saturday morning, Josie arrived at the bakery just as it was closing. The bakery always closed early on the weekend so Uncle Dave could walk his dogs. “Ready, Josie?” Uncle Dave asked “Ready!” Josie answered.

First, Uncle Dave had Josie get all the ingredients (原料) and line them up on the work table. Then he showed her how to measure flour and sugar so that she had the exact right amount. She added these ingredients to a large mixing bowl. Next, Uncle Dave tapped an egg on the side of the bowl to crack it. “Be careful not to get any bits of shell in the bowl,” he said.

Josie tapped her egg very gently on the bowl. It didn’t crack. She tried again, and this time the shell came apart. She pulled the egg apart over the bowl and watched the yellow egg yolk drop into the flour.

Now it was time to stir. “This is fun!” said Josie.

When the batter was ready, Uncle Dave helped Josie pour it into the cake pan. He gave Josie oven mitts (烤箱手套) and showed her how to put the pan in the oven without burning her hands.

8 . Cake moulds are cake pans in fun or functional shapes. You might often see them referred to as cake forms or cake shapes. Cake moulds are especially designed to make it easier to bake a cake.     1

Generally, a cake mould is often made out of silicone (硅酮).     2     Also, it bends easily, making it easier to remove the cake from the pan without damaging it.

Cake moulds are sold in kitchen supply stores and baking stores.     3     A cake mould might also refer to a cake pan used for a specific purpose, such as a muffin (松饼) pan. They are generally fairly inexpensive and last a long time.

4     You might buy a cake in the shape of a castle for a princess birthday party, or in the shape of a football for a sports enthusiast. Animal shapes are fun to make, and kids can help. For the holidays, you might make a pine tree-shaped cake, or for graduation, a cake in the shape of a graduation cap.

It can be difficult to remove a cake from a cake mould without damaging it. Even if the pan is non-stick, which most are, you should still grease (抹油) the pan well before baking.     5     When you are ready to remove the cake, place a plate underneath the pan and flip (翻动) it over so the cake can slide out neatly onto the plate.

A.Cake moulds vary in design and color.
B.This kind of cake mould is a breeze to use and wash up.
C.There’re virtually limitless possibilities for cake moulds.
D.You can also order specially or personalized ones online.
E.Allowing the cake to cool fully will also aid in the process.
F.Here are some things to consider when choosing a cake mould.
G.So you do not have to do all of the shaping and designing yourself.

文章大意:这是一篇记叙文。文章讲述了在费城长大的Lieberman从小学习做菜的事情。他七岁的时候开始学做菜,大学之后开始因为做菜而出名,得到了各方关注。

9 . Growing up in Philadelphia, Lieberman started cooking with his stay-at-home dad when he was seven. His food-loving family had two kitchens, and he quickly learned what was the best way to bake his cakes. Lieberman improved his kitchen skills greatly during a year abroad before college, learning from a cook in Italy and studying local specialties (地方特色菜) in Germany, Spain and France. At Yale, he was known for throwing dinner parties, single-handedly frying and baking while mixing drinks for dozens of friends. Just for fun, he and some friends decided to tape a show named Campus Cuisine about his cooking. Lieberman was a real college student showing his classmates how to do things like making drinks out of dining-hall fruit. That helped the show become very popular among the students. They would stop Lieberman after classes to ask for his advice on cooking. Tapes of the show were passed around, with which his name went beyond the school and finally to the Food Network.

Food Network producer Flay hopes the young cook will find a place on the network television. He says Lieberman’s charisma is key. “Food TV isn’t about food anymore,” says Flay. “It’s about your personality and finding a way to keep people’s eyeballs on your show.”

But Lieberman isn’t putting all his eggs in one basket. After taping the first season of the new show, Lieberman was back in his own small kitchen preparing sandwiches. An airline company was looking for someone to come up with a tasteful, inexpensive and easy-to-make menu to serve on its flights; Lieberman got the job.
