文章大意:这是一篇说明文。主要介绍了干酪披萨馅料制作的指导说明。

1 . Cheesy Pizza Stuffing

Yield: 4 to 6 servings
Time: 45 minutes, plus drying bread
Ingredients:
• 1 (12-to 14-ounce) loaf brioche (黄油面包), torn into bite-size pieces (about 4 cups)
• 4 tablespoons unsalted butter, plus more softened butter
• 1 large yellow onion
• Salt and black pepper and 2 tablespoons tomato sauce
• 1 large egg and 1 cup whole milk
• 2 cups shredded low-moisture mozzarella (马苏里拉奶酪)
Directions:

The night before serving, spread the bread pieces on a sheet pan and let sit on the counter to dry out. Alternatively, you can bake them at 250 degrees until completely dried out and no longer soft, 20 to 30 minutes.

When ready to make the stuffing, transfer the bread to a large bowl. Heat oven to 350 degrees and grease a 9-by-13-inch or 8-by-11-inch baking dish with softened butter. Melt the 4 tablespoons butter in a large skillet over medium-high and add the thinly sliced onion. Season with salt and pepper, and cook, stirring occasionally, until slightly browned at the edges, 5 to 7 minutes. Stir in the tomato sauce and cook until fragrant, about I minute.

In a medium bowl, beat the egg with a fork, then beat in the milk. Pour the milk mixture over the bread and toss with two spoons until evenly coated. Add 1 cup mozzarella and toss again until well combined. Let sit until the bread fully absorbs the liquid, about 5 minutes.

Transfer the stuffing and any accumulated liquid to the greased baking dish, spread out evenly and top with the remaining 1 cup mozzarella. (To make ahead, you can stop at this stage, cover the dish and refrigerate for up to 24 hours.)

Bake, uncovered, until heated through and the cheese is melted, 15 to 25 minutes. (You may need to add a few minutes to the bake time if the stuffing has been refrigerated.)

3 . How Culture Affects Cuisine

It probably happened to you: You ate this incredible dessert in Turkey, you tried this fantastic dish in Spain, and you brought the recipe back home — just to feel the disappointment that what you cooked at home didn’t pass the taste test.

It’s likely that groceries have different qualities in different countries. In the case of the United States and Europe this has very little to do with soil or climate.     1     Consumers in the U.S. have other preferences in groceries than most Europeans. It comes down to culture.

Europeans often value quality more than quantity. Of course you will find out-of-season produce on the shelves of grocery stores as well.     2     Europeans especially are willing to give up short-term gain for a much greater long-term result.

Take, for example, Italians produce dry-cured ham (干腌火腿) only during the waning moon that follows the full moon and it is practiced to this day. According to old farmer’s lore, the meat could go bad, if it isn’t cured by the moon.     3

However, Americans believe in progress and the benefits of technology. It becomes clear why following tradition doesn’t have to be a strong value. Food for U.S. consumers is produced and shipped across the country.     4     The industrialization of food production results in new breeds of produce. The population growth calls for higher quantities. Farmers and growers are paid for the amount, not for the flavor.

5     European cultures are rather regional, and this means food traditions have remained undamaged in fairly small areas. Within these regions and communities people often shop locally from regional producers. And they shop more frequently than Americans. Europeans often go to the local market daily whereas millions of shoppers in the U.S. purchase one or two weeks’ supply of groceries in one single visit to the big box store.

All these consumer choices, based on cultural behaviors, have had a lasting impact on how our food is grown and what it tastes like.

A.Geography plays another role here.
B.Refrigeration makes it possible to store foods longer.
C.However, demand for better quality is greater in their countries.
D.This great interest in culinary (烹饪的) tradition is a cultural feature.
E.The main reason why produce tastes different here and there is choice.
F.Food provides the world with one of the only ways to universally communicate.
G.Often our culinary preferences have an effect on the vacation destinations we choose.

7 . 阅读下面材料,根据其内容和所给段落开头语续写两段,使之构成一篇完整的短文。

When I was young, the kitchen had an invisible“stop" sign put there by my mom. “No, you cannot enter here!” she always said to me. Well, I really don’t blame her as it is no place for kids.

I was just left outside in admiration, looking at what wonders the kitchen held. A few years passed by and I became very interested in food, both eating and preparing it. However, the kitchen was still out of bounds so I couldn’t experiment with cooking. But they couldn’t stop me forever now, could they?

It was early morning. Mom had gone for grocery shopping and no one else was at home. Time to strike! I walked through the dining room and there was the kitchen in front of me!

I stepped inside and took in the sight in front of me—cabinets (储藏柜 ) lining a wall, the oven (炉子) occupying the central place of another wall, the dishes sparkling like diamonds. I had seen it from outside but this time it was up close. As I hadn’t had breakfast, I decided to begin my first experience as a cook by making an omelette (煎蛋) . Sure I had seen Mom do it, so how could it be hard?

I searched the cabinets and finally found some eggs and onions. I knew the basics, so I began the work. I washed an onion first and then chopped it. Then came the egg. It took me two or three attempts to crack one open and into the bowl. I put the onion and some salt in the bowl too and mixed them. After that, I lighted the stove and put the frying pan on it and poured some oil in it... and poured some on the floor too, accidentally, of course! Till the pouring of the mixture into the pan, everything was going perfect—then I wondered what was used for turning the egg upside down in the pan.

文章大意:这是一篇说明文。主要介绍了烘培石做披萨和面包的好处以及它在烘焙中有很多其它的应用。

9 . Long before metal oven racks (架子) were invented, many people would place the things that they wanted to bake onto stones to keep them from burning in ovens or even directly on heat.     1     However, there are actually many applications for its use in baking.

Typical baking stones can be made of various materials, and tend to be either round or rectangular in shape. The clay stone is popular, but some people like marble. Some have a shiny surface and others don’t have.     2     Some people suggest that heading to the local kitchen supply store to purchase a baking stone is a waste of time and instead they purchase tiles (瓦片) from kitchen or gardening stores.     3     They may contain high amounts of lead and cooks would need to test them for the presence of lead before using them to cook.

4     Baking stones absorb and keep heat very well, so when you put them in the oven and allow the oven to run for a while, the stones heat up. They transfer heat directly to the bottom of your bread or other goods, as the goods can be placed directly on the stone so they never start out on a cold surface. This allows bread to bake more evenly all over, resulting in a much nicer crust (酥皮)—particularly for artisan bread.

There are many benefits of using a baking stone to cook pizza or bread.     5     For another, the stone is also praised for its ability to evenly heat the crust and lessen chances that pizza or other bread will burn.

A.The way that baking stones work is simple.
B.Baking stones can be found in all shapes and sizes.
C.For one thing, it tends to produce more desirable qualities.
D.That makes them uniquely useful for many cooking creations.
E.Today, the baking stone is associated most with cooking pizza.
F.So you can choose from a great variety of stones on the market.
G.However, most of these products are not rated for safety in cooking.

10 . Cook in the kitchen

Earlier last month, my parents and I had a free day — a rare event for us.     1

For our weekend menu, we decided to make smoked pork. I found this recipe online. It looked interesting and the steps were simple. So we decided to make it for dinner one weekend.

First, according to the recipe, the pork needed to be salted. The process would take a long time.     2     Mom first thawed (解冻) the pork and then spread salt, sugar and pepper or the surface, After that, she wrapped the pork in a plastic film (塑料薄膜) and refrigerated it for two days.

3     To make smoked dishes indoors, we needed to use aluminum foil (铝箔). After searching for it for a long time, we finally found the foil in the cupboard.

After that, Dad was responsible for slicing (切片) the pork, Mother was responsible for preparing the ingredients (佐料). I was responsible for spreading the black tea and sugar for smoking on the aluminum foil and then a layer of baking paper.     4     After more than ten minutes of smoking and a few minutes of frying, the smoked pork was complete.

5     When combined with an apple vinegar sauce, the meat was even more delicious.

A.It was easy for me to make the food.
B.Pork is the main meat source of our food.
C.We decided to cook together in the kitchen.
D.Finally, I put the pork on the smoking shelf.
E.So, Mom started working on it early the night before.
F.Two days later, the pork was ready for the next steps.
G.The pork was very delicious and contained the special smell of black tea.
