In the study, researchers interviewed more than 100,000 people from Shaanxi, Gansu, Qinghai, Ningxia and Xinjiang in northwest China. The participants (参加者) were between the ages of 35 and 74. They provided information about their medical records and lifestyles, such as the smoking habit and physical activity.
The researchers divided the participants into three groups according to how often they eat rice and wheat each week. The first group eat rice either daily or four to six times a week, and eat wheat less. The second group prefer wheat, and the third group eat both rice and wheat with similar frequency (频率). The participants with normal weight showed a 36.5 percent lower risk of obesity in men and a 20.5 percent lower risk of central obesity (stomach fat) in women.
According to the researchers, wheat takes in less water than rice when cooked and has higher energy than cooked rice of the same weight. Moreover, rice often comes with fresh vegetables, meat and fish.
